Buldang-dong Korean restaurant off-peak, two bowls for two: Hyangtaek
In short
Hyangtaek Cheonan Buldang Branch is a Korean rice-dish restaurant on Buldang25-ro in Seobuk-gu, Cheonan. A first visit ended in a turnaround because the wait was too long, so a return trip well past peak time secured a table for mackerel gondre rice and eggplant doenjang rice bowl, eaten with gopchang gim (crinkled seaweed), bibim jeotgal (seasoned salted seafood) and the house sauce. Both bowls were generous enough that two people shared them and still left food behind, though the lack of kimchi was a letdown.

Rather than just a bowl of rice, it's a place that adds joy to a meal by combining familiar Korean ingredients in a slightly different way — Hyangtaek finally opened in Buldang-dong, Cheonan, so I went to check it out^^
Actually I'd tried once before, but the wait was so long I turned around — seems it's already become a word-of-mouth restaurant in Buldang-dong. This time I thought about doing an opening run, but instead went well past peak time and barely managed to get seated right away^^

Overall it's a lineup of healthy Korean dishes that let the natural flavor of the ingredients shine rather than leaning on strong seasoning!

◈ How to enjoy Hyangtaek — mix the rice and ingredients evenly, add the special sauce or mixed jeotgal (seasoned seafood), then wrap it in gopchang gim (thick roasted laver) and eat.
The full table setting served at Hyangtaek in Buldang-dong
Beyond the main dish, Hyangtaek Cheonan Buldang Branch serves a neat table spread with miso doenjang soup, gopchang gim, a special sauce, mixed jeotgal, and gungchae pickles.

The gopchang gim was thick and crisp, great for wrapping. The mixed jeotgal was sweet-spicy and delicious even eaten straight mixed into rice — total rice thief. The gungchae pickles had a wonderful crunch, one of those upscale Korean side dishes^^
Honestly, looking at the rice and side dish spread at first, I thought the portions wouldn't be much — but once we started eating, it turned out to be quite generous. The two of us aunties got so full we had to leave some behind! Hyangtaek was fun in that you get to mix and match the rice, sides, sauce, and gim to your own taste^^
How does Hyangtaek's popular mackerel gondre rice taste?
Mackerel gondre rice is the most popular dish at Hyangtaek Cheonan Buldang Branch. Fragrant gondre (dried thistle) greens, savory grilled mackerel, sweet-and-salty braised mushrooms, and nutty sesame come together beautifully in this dish!

The subtle aroma of the gondre greens felt just like sitting down to a country-style meal!

The mackerel was quite thick too, so even after mixing everything the fish flavor stayed rich, and crisp-outside-tender-inside enough to enjoy just placed on top of a bite of rice.

The chive sauce wasn't harshly salty, making it a great, savory seasoning for the bibimbap-style mix!
Breaking the mackerel into small pieces with a spoon and mixing it all evenly, it tasted great and well-seasoned even eaten plain.

Depending on your taste, add the chive sauce or wrap it in laver with mixed jeotgal on top and take a bite — pure heaven in your mouth^^ It manages to be both healthy and refreshing at the same time^^
Hyangtaek's eggplant doenjang rice bowl and kelp in vinegar
Hyangtaek's eggplant doenjang rice bowl brings together well-grilled eggplant, deep gangdoenjang (thick soybean paste), fragrant chives, and crunchy puffed rice — a dish that covers moistness, savoriness, and texture all at once.

The moisture-rich eggplant was grilled well, keeping its soft, moist texture alive.

The kelp vinegar adds savoriness and tang to the mild eggplant doenjang bowl, upgrading the flavor into something clean and one level up as a special sauce^^
Pull the eggplant apart with your chopsticks and mix it well so the gangdoenjang spreads evenly, and you get both moistness and savoriness at once^^

In particular, wrapping it in laver seems to really bring out its true flavor^^

Even the cola came served in an ice cup — so touched^^ Still, since it's a Korean restaurant, I did wish kimchi had been included too^^
Is Hyangtaek in Buldang-dong, Cheonan worth a visit? Final verdict
Hyangtaek Cheonan Buldang Branch let us enjoy a meal built from familiar Korean ingredients combined in a slightly different way!

The mackerel gondre rice was filling with the savory aroma of gondre and clean-tasting mackerel, while the eggplant doenjang rice bowl impressed with the combination of moist grilled eggplant and gangdoenjang.
Best of all, being able to add gopchang gim, mixed jeotgal, and the special sauce according to your taste meant there were many ways to enjoy a single bowl of rice.
A Buldang-dong restaurant worth remembering when you want a clean, filling meal! Both dishes had generous portions that left us full, and I'm already curious to try the other rice dishes next time.
