Byway Bakers Cheongsa Main Branch is a bakery on the first floor of the Gyeongnam Building, right across from the Gyeonggi Provincial Government North Branch Office in Uijeongbu. I was walking through this area for an errand, and a bakery was genuinely not on my agenda that day. Not even a little. I was walking toward my destination, and I'd already done the math that buying a snack midway would mess with dinner.

But whatever plans a person makes turn out to be pretty flimsy in front of the smell of baking bread.

While walking, the distinct smell of butter and freshly baked bread hit me all at once. At first I just kept going. I'm not sure exactly how many more steps I took, but I ended up turning back. At this point, my nose found it before I did — my body just followed.

That's how I ended up walking into Byway Bakers Cheongsa Main Branch.

Where is Byway Bakers and what are the hours?

It's not much of a walk if you're starting from the station. Since it's right across from the Gyeonggi Provincial Government North Branch Office, it's a good stop if you have business in this area anyway.

Basic hours are 9:00 AM to 8:30 PM. That said, they may close early if the bread sells out, and coffee orders stop at 7:30 PM, so if you're planning a late visit, it's worth checking ahead.

Walking into the store, the source of that outdoor smell appeared all at once, right in front of me.

Even with just salt bread, they don't stop at the familiar basic version — you notice items combined with other ingredients — and alongside that, baked treats like financiers and tarts that make good gifts are also on display.

The fig pistachio tart I picked also makes its ingredient combination clear right from the name. It's the kind of lineup where you come in to buy something familiar and end up picking up something you wouldn't normally choose.

How does the salt bread taste and feel?

And bread, in the end, comes down to texture.

It doesn't end after the first bite — the crust you touch first, the texture as you chew toward the center, and finally the butter and flavor of the ingredients that linger, all come one after another. The salt bread type especially has a real difference between the crust and the inside, so it's more fun to chew through it a few times than to swallow it quickly.

Verdict: almost walking past Byway Bakers was the real mistake

Looking back, my biggest mistake that day was trying to just walk past in the first place.

I walked past once, turned back because of the smell, went in telling myself I was only browsing, deliberated pretty seriously in front of the display case, and walked out with Wakppu salt bread, a fig pistachio tart, and mocha salt bread.

If you're looking for a bakery in Uijeongbu on purpose, it's worth the trip, but if you already have business near the Gyeonggi Provincial Government North Branch Office, it's even simpler. Just walk around the area and see if your nose reacts first.
