Traveling toward the Bomun tourist complex in Gyeongju, you eventually want somewhere hearty to eat Korean food. This time I stopped at Hyoeunok, right across from Donggung Park, and tried its boldly named signature dish, the Ppyeoberest.
The visual alone — beef ribs and beef bones stacked up like a mountain — made a strong first impression. It's a hot pot made with premium beef short ribs and slow-simmered beef bones, so the broth deepens with meaty flavor as it boils. If you're looking for a Bomun-area restaurant in Gyeongju to eat heartily with family, this one's worth a visit.

Thick ribs and beef bones were stacked high in the center, with plenty of bean sprouts and minari layered underneath, so it really did look like a small mountain. At first I wondered, 'How am I supposed to eat this?' — but once the burner's on, the broth underneath starts boiling and the heat and steam rise up, cooking the meat and vegetables naturally.

It's not just a visually striking dish — the process of eating it is genuinely fun, which should appeal to anyone looking for a memorable meal while traveling. The beef rib broth deepens the longer it boils
Rather than sipping a lot of broth right away, I found it better with the Ppyeoberest to let it simmer well. As it boiled, the flavor of the beef ribs and bones seeped into the broth, and the bean sprouts and minari added their own fresh, cooling note — the broth got richer the longer it went.

Picking the meat off the bone was part of the fun, and with both tender and chewy bits mixed in, the texture never got boring. Eating meat alone can feel heavy, but pairing it with bean sprouts and minari made it go down much more cleanly. If you're after a filling soup dish in Bomun, this is genuinely one of the most satisfying options around.

The bean sprouts packed around the edge of the pot wilted down as the broth boiled, while the minari released its aroma and cut through the richness of the beef broth. Taking a bite of meat with bean sprouts and minari together added a crisp, fragrant contrast that worked really well. So if you prefer the deep flavor of the broth itself over strong seasoning, this is worth considering for your Gyeongju itinerary.
