Today I'm introducing Hyoeunok Gyeongju Branch, a great spot to visit when you're craving a hearty Korean meal during a Gyeongju trip~~! I tried the Ppyeoberest Original, famous for its mountain-high stack of beef ribs! It's not just a flashy dish though — you get to enjoy beef ribs, shabu-shabu, kalguksu, and porridge all as a course, making it a real Gyeongju Bomun favorite 🏔️

There's also a wide parking area in front of the restaurant, so it was easy to visit even while getting around Gyeongju by car 🚘

What I had that day was the Ppyeoberest Original 5-item set! The chunky beef ribs were stacked up in a visual that really lived up to its Everest namesake!

Beyond the beef ribs, you get vegetables and mushrooms, shabu-shabu beef, kalguksu, and gondre porridge all in one generous set, making it the perfect hearty meal (˶˃ ᵕ ˂˶)ෆ
How tender are the beef ribs at Hyoeunok?
The beef ribs in the Ppyeoberest come already fully cooked, so all you need to do is warm them up at the table.





The broth flavor had soaked deep into the meat, as if it had been simmered for a long time,
and the meat on the bone was so tender it came apart easily with chopsticks, making it easy to eat!

Minari shabu-shabu, kalguksu and gondre porridge to finish
After eating a good amount of the beef ribs, I moved on to the second course by adding vegetables, mushrooms, shabu-shabu beef, and kalguksu noodles.



After finishing the shabu-shabu, you add kalguksu noodles into the leftover broth! The richly infused beef rib broth soaked into the noodles, so I could enjoy something warm and satisfying right to the end.
Lightly cooking the fragrant Gyeongju minari (water dropwort) and tender beef in the warm broth made for a clean, aromatic combination! Even after finishing all the meat, it felt like starting a whole new dish, which made the meal really fun haha
