I’d like to introduce a great place to visit when you’re craving a warm, satisfying Korean meal in Gagyeong-dong, Cheongju. This time I visited Sorori Sotbap Gagyeong Direct Branch (소로리솥밥 가경직영점), where you can try pot rice made with a range of seasonal ingredients. How did I eat the Korean beef large-intestine pot rice?

First, the Korean beef large-intestine pot rice was a lovely pairing of rich, savory daechang (beef large intestine) and warm pot rice. If you enjoy daechang’s distinctive richness, this is a menu item you’ll likely be very pleased with. How to enjoy Sorori pot rice

Pot rice is even more enjoyable when you follow the suggested method rather than simply eating it as-is. Once it arrives, mix the rice and toppings well, transfer them to your rice bowl, then add soy sauce, butter, and furikake (Japanese rice seasoning) to suit your taste. Wrapping the pot rice in the accompanying gim (roasted seaweed) was delicious too.

Sorori says it carefully prepares the galbijjim with its own broth and special short-rib sauce, and eaten with the rice, it definitely had the hearty comfort of a Korean meal. Even though it was just one meal, I was impressed by the care that went into preparing both the rice and braised ribs.

And after finishing the pot rice, you can pour in warm broth and enjoy it like ochazuke (rice in tea or broth)!
