I'd gone out to Suwon for an outing not long ago and came back having had a genuinely wonderful dinner. The moment I arrived in Suwon my stomach was already growling, so I started a frantic search for the day's first meal and a proper dinner spot all at once. That's how I found 'Jipbul Taebaek Suwon Ingye Branch,' which apparently is quite the hot spot in Ingye-dong.

I already had high expectations just from hearing it was a woodae galbi (prime rib) specialist, but I can tell you right off the bat: I walked out with zero regrets, completely and utterly satisfied. But looking at the menu, I kept getting curious about a separate item called 'woodae galbisal.'

Since woodae galbi comes bone-in and can only be ordered starting at 2 servings the first time, but woodae galbisal can be added one serving at a time, I figured I'd give it a try and ordered one extra serving.

Grilling up the extra woodae galbisal, it was definitely a bit fattier than the regular bone-in woodae galbi, with juices that burst in your mouth with a nuttier, firmer texture. Curious, I asked the staff, 'what's the difference between regular woodae galbi and woodae galbisal?' and they kindly explained the secret.

How Jipbul Taebaek sorts its raw meat — When top-grade beef arrives at the restaurant, the first inspection sorts the highest-quality, best-shaped cut as 'raw woodae galbi,' and the next-best grade becomes 'marinated woodae galbi.' Cuts where the meat quality itself is excellent but have a bit more fat in certain spots, or aren't shaped right to serve bone-in, get the fat carefully trimmed away, and only the choice lean meat is prepared and sold by the single serving as 'woodae galbisal.'

So it turns out regular woodae galbi and woodae galbisal are entirely the same cut of raw beef! The straw-fire searing process that gives it that aroma is identical, and even though it's an add-on item, the staff still grills it tableside from start to finish just the same — so I got to enjoy every last piece with full satisfaction.
