Now that the weather's turned chilly, when I think 'what should I eat tonight~' pork soup is always the first candidate! It's a hearty national meal that everyone, young or old, loves. I went to Ungjin Dalseo Dwaeji Gukbap, a pork soup restaurant open late until 1am near Gamsam Station and Gwangjang Coa in Duryu-dong, Dalseo-gu, Daegu.

Ungjin Dalseo Dwaeji Gukbap hours, late-night closing and parking
Ungjin Dalseo Dwaeji Gukbap is open Mon–Sat from 09:00 to 01:00 the next day, last order at 00:00, and closed every Sunday. Even though I visited late on a weekday afternoon, there was a line of customers going in — people of all ages and genders come here.
There's parking for about 2 cars in front of the restaurant. There's also a Seodaegu Tax Office nearby where you can park.

Inside the restaurant: easy solo dining and unlimited refills
The interior of Ungjin Dalseo Dwaeji Gukbap is spacious and clean. The tables are spaced well apart so there's no problem chatting while eating. With plenty of tables, turnover is good, and since it's known for solo dining, there are two-seat tables ready for that too. When I visited, there were lots of people eating alone with a drink on the side.
They say every gukbap (soup with rice) and suyuk (boiled pork) is hand-sliced, not machine-cut, and made carefully bowl by bowl. All the side dishes served to guests are apparently homemade too. And here's the thing — if you run out of side dishes, rice, or bone broth while eating, they're all unlimited refills! Just call a staff member or help yourself.
I've seen unlimited side dish refills plenty of times, but unlimited rice AND bone broth refills too?! Guys would really love this place haha.

Bone broth simmered 1,080 minutes and the self-serve bar
They say the side dishes are made directly with domestic ingredients.
You can see the broth room, kept spotless. It's a medicinal-tonic-like pork soup made by simmering domestic bone stock and Korean chilled pork foreleg for 1,080 minutes. They say the bone broth is brewed slowly like a health tonic.
The self-serve bar is kept clean and tidy. It was great being able to comfortably take as many side dishes as I wanted.
There are aprons and hair ties on the wall for anyone who needs them. Salt, pepper, and perilla seed powder are placed at the seats so you can season to your own taste.

How to season and eat your bowl of gukbap
There's a guide at every seat on how to eat the gukbap deliciously: try eating the big piece of meat on top like suyuk. Since the long-simmered bone broth has no added seasoning at all, you need to season it yourself. I personally prefer mild flavors, so I really love that this place lets you adjust the seasoning to your own taste.

After ordering, the basic side dishes come out fast. Chili peppers, onions, kkakdugi (radish kimchi), geotjeori (fresh kimchi), and various seasonings all arrive neatly arranged.

Double-portion special mixed gukbap: how much meat do you get?
I ordered the double-portion special mixed gukbap and the lean meat pork gukbap. True to being Korean fast food, they came out really fast. I ordered exactly the same as last time I visited haha.

Thin slices of pork foreleg laid out neatly — they say if it looks good, it tastes good, and the look here is genuinely more appetizing than other gukbap places.

The suyuk piled on top was perfect for eating like actual suyuk, exactly the way the owner told me was the best method.

I did order the double-portion special mixed gukbap, but honestly, every time I come here I feel like they never hold back for their guests. The amount of meat is unreasonably huge. Every time you stir it, you hit meat, and by the time you're eating you almost feel guilty that they'll refill the bone broth for free too — ㅜㅜ.

Since it's a mix, it's generously loaded with various parts — pork, organs, sundae — so I'd recommend this menu to anyone who wants to eat until they're completely stuffed.

Lean meat gukbap, swapped at no extra charge
Lean meat gukbap — I don't like fatty meat, so whenever I visit a gukbap place I always switch to lean meat. Ungjin Dalseo Dwaeji Gukbap lets you swap with no extra charge, so happy ★
There's a ton of meat underneath the fresh green chives... a proper protein-loading day.
They give an unreasonable amount of meat. Even on a repeat visit, the owner's generosity hasn't changed at all, and today I'm moved all over again and decided to become a loyal regular..♥
Even without fat, it's a tender lean cut. Not dry at all. It's a delicious lean part (I'm a lean-meat person myself, but I hate dry lean meat). Dip it in the sauce they give you and...

The rice portion is also unreal. Look at this rice bowl packed to the brim... if Ungjin Dalseo Dwaeji Gukbap were near my office, I'd probably come here every single day for lunch.

The broth flavor and the old-style sundae
But this is the first time I've had such a rich broth in a gukbap. The moment I really felt that the long-simmered bone stock is the real deal. It's genuinely thick, genuinely tastes like real broth. Real broth. (You know what I mean)
My friend who ordered the mixed gukbap gave me some of their sundae. I loved that it was old-style sundae, not the chewy modern kind!

I really finished it down to the last drop... wrapped up dinner full and satisfied. Whether you visit alone or with others, this is a pork soup place where everyone can eat comfortably and deliciously in their own way. Overall the rich broth was really appealing and there was zero of that typical pork gukbap smell, which made for a satisfying meal. The owner and all the staff were kind, so it was a pleasant meal all around. I recommend Ungjin Dalseo Dwaeji Gukbap, a gukbap specialist in Dalseo, Daegu, near Gamsam-dong and Duryu-dong's Gwangjang Coa.
