1. Soup — chestnut, cremini mushroom, fresh cream

Chestnut and mushroom soup at Don Tamguso

First up, a warm mushroom-chestnut soup to whet the appetite. The deep, savory flavor of the mushrooms, the subtle, luxurious sweetness of the chestnut, and the softness of the fresh cream came together to gently soothe our stomachs from the very first bite.

My mom said it was so nutty and rich — a satisfying first course! Totally creamy~~

2. Salad — dried persimmon, orange, apple, basil, prosciutto

3. Lasagna — shiitake, white ragu, mozzarella, smoky sauce

Third came a white ragu lasagna full of smoky flavor! The rich white ragu sauce, packed with shiitake mushrooms and meat, combined with the chewy mozzarella and a subtle smoky aroma, filled our mouths with flavor with every bite.

It was rich and hearty without being greasy at all — I loved it.

Total mom-pick 👍🏻👍🏻

4. Main 1 — shio koji tenderloin, cremini mushroom, sun-dried tomato

Plate of shio koji-cured grilled pork tenderloin

The first main was a gorgeous-looking grilled pork tenderloin. Because it was gently aged with koji (shio koji), the meat was unbelievably moist and melted in our mouths.

A bite of tenderloin topped with mushroom and sun-dried tomato

Topping the clean-tasting tenderloin with sautéed mushrooms and tangy sun-dried tomato meant zero greasiness and an explosion of the meat's own umami.

One bite of mushroom, one bite of tenderloin — my mom and I both went 'ooooh, this is so good~!' haha

5. Main 2 — pork belly with minari, Sichuan pepper, cumin, fennel

The second main was a grilled pork belly with an appealing hit of exotic spice!

Crisp on the outside, juicy inside, the pork belly carried the subtle scent of Sichuan pepper, cumin, and fennel — not greasy at all.

Crunchy, fragrant minari (water dropwort) cut through any heaviness completely, so we could enjoy it cleanly to the last bite. The meat was so moist and tender.

6. Choice of course — jambon burger or abalone risotto

I chose the burger, my mom chose the risotto.

Signature Burger (jambon, arugula, fennel): the saltiness of the house-made jambon, the slight bitterness of the arugula, and the fragrant fennel came together beautifully with the bun and fillings.

Disposable gloves are provided at every table — just put them on and press the burger down to eat it.

Signature Risotto (Wando abalone, barley, glasswort, Grana Padano): the savory abalone-liver sauce, the pop of the barley's texture, and the aroma of glasswort made for a clean, upscale risotto — perfect to serve when you're dining with your parents.

Finishing with the chewy abalone left us extremely full.

7. Dessert — dessert of the day (panna cotta)

Today's dessert, panna cotta

Rounding things off was a soft, sweet panna cotta! The pudding melted the moment it hit our mouths, with a deep nuttiness that felt like it rinsed away all the richness from the meat course.

The owner kindly told us, 'Don't mix it, just scoop it up as is~' 😆👍🏻

Is Don Tamguso worth it? Verdict and tips
