The offal still left on my Busan food bucket list
Busan 💙 one of my favorite travel spots ever. I've been so many times, but there's still one dish I hadn't crossed off my Busan food bucket list yet.. that's right, yang gopchang (grilled beef tripe and intestines)❗️ On this solo Busan trip I really wanted to finally eat it, so as soon as I landed I headed straight for the offal alley in Nampo-dong. The restaurant I picked was probably the hottest spot on the whole alley.. Bupyeong Yang Gopchang.

Outdoor tent vs. indoor seating, Sunday afternoon mood
The weather's warmed up a lot lately, perfect for sitting outside, and plenty of people were enjoying the outdoor tent tables at this Busan spot known for its outdoor drinking. I debated sitting outside but ended up picking a seat in the comfortable indoor space instead 〰️. I arrived around 2pm on a Sunday and customers just kept coming — there were tourists like me, but also tons of middle-aged and older local regulars. Officially confirmed as a local favorite in Busan 🙌

Menu and ordering at Bupyeong Yang Gopchang
There are three menu options: salt-grilled, stone-pan seasoned, and beef intestine hot pot! Salt-grilled and stone-pan seasoned seemed to be the most popular. Since I'd had grilled offal recently, salt-grilled didn't appeal to me, so I went with the stone-pan seasoned (small) and added bunmoja noodles.

The basic side dish spread and service soybean soup
The basic side dish spread was pretty generous. If any sides run low, just ask the staff and they'll refill them generously.


The complimentary soybean soup — or is it soybean stew? — that comes as a service has two kinds of tofu in it, and as a tofu lover, this kind of service is exactly my thing ^.^


Soju-beer mix first for a solo lunch and drink
Before the offal even arrives, they'll mix you a refreshing soju-beer combo 🍺. I was the only solo customer that day, but the atmosphere wasn't the least bit awkward for eating and drinking alone — I enjoyed it comfortably.

Stone-pan seasoned small set — staff handle everything
Finally, my yang gopchang arrives~~!! The cuts include beef intestines, large intestine, and heart, plus potato and king oyster mushroom. The staff trim everything themselves and keep watch until it's fully cooked.

They even set up a splash guard so the sauce doesn't spatter — such a thoughtful touch 🥹. As the offal cooks, the sauce thickens up, and tasting it, it's spicy-sweet with incredible depth of flavor. Once the offal was fully cooked, they added the bunmoja noodles I'd ordered as a finishing touch, and then told me it was ready to eat.

The yang gopchang I'd been waiting and waiting for at this Nampo-dong favorite~~! The bright red stone-pan seasoned offal looks so good my mouth is watering already 🤤


Pairing it with pickled onions
The heart, beef intestines, and large intestine were fresh with no off smell at all, and they went so well with the spicy-sweet sauce! It's delicious on its own, but eating it with the pickled onions gave it a better texture and kept it from feeling too rich, so I kept refilling the onions haha.

I debated between glass noodles and bunmoja noodles and went with bunmoja — great to look at and great to taste too~~ Highly recommend the chewy bunmoja noodles 💛
With the small size plus the added bunmoja, it was honestly a lot of food for one person, but I felt like I'd seriously regret leaving without trying fried rice with this sauce, so I ordered that too.


Fried rice is a must
Wow.. exactly as expected, seriously delicious. Udon noodles, bunmoja, and glass noodles are all great, but if you're getting the stone-pan seasoned option, make the fried rice a must-order.. 👍 The rice paired perfectly with the spicy-sweet, richly reduced sauce. I'd complained about being full, but somehow ate the fried rice better than anyone before walking out.

The indoor restrooms, separated for men and women, were clean too, so they were comfortable to use ✨
Wrap-up
Bupyeong Yang Gopchang, a Busan offal favorite in Nampo-dong. There's a reason it's been loved by locals for so long. A place solo diners worried about eating alone can visit without any concerns!
