Suwon BBQ with tableside-grilled 300g prime ribs: Jipbul Taebaek
In short
Jipbul Taebaek Suwon Ingye Branch is a Korean BBQ restaurant near Nahyeseok-gil in Ingye-dong, Suwon, serving udae galbi (thick-cut prime beef ribs) seared over a straw fire. The writer ordered the marinated prime ribs, 300g for 32,000 won, and watched the staff trim and grill the meat at the table, with an explanation of why it is browned almost to the point of charring (the Maillard reaction) and how to eat it. Thick but never tough, with a gentle straw-smoke aroma and tangy side dishes and sauces alongside, the meat at Jipbul Taebaek stayed enjoyable to the last bite.

The staff grilled the meat for me and even explained how to eat it, so I had a comfortable meal. Here's my honest review ෆ

Marinated prime ribs 300g for 32,000 won, minimum two servings

What I ordered that day was the marinated prime ribs. It's ₩32,000 for 300g, and you need to order at least 2 servings ෆ

After a short wait, the pre-seared prime ribs came out. The meat was thick and looked really appetizing. Since it's seared over straw fire, I could catch a subtle straw-smoke aroma too ෆ
Staff grill the prime ribs at your table
One thing I loved about Jipbul Taebaek was that the staff grilled the meat for me! They trimmed the pre-seared prime ribs into bite-sized pieces right at the table and grilled each piece one by one.
Thick prime ribs are honestly tricky to grill at home — you worry the outside will burn while the inside stays undercooked. With staff grilling it for me, I could just focus on enjoying the meat.
Why prime ribs taste best just before they char

While they were grilling, it looked slightly charred to me, so I asked, "Isn't this a bit burnt?" The staff explained that prime ribs taste best when grilled golden brown, right up to the point before burning. Apparently it's because of the Maillard reaction that happens on the surface of the meat as it grills.
After hearing that and taking a bite, I understood why they grill it that way. At first it looked a bit charred and I was worried, but once I tried it, I could taste the nutty, savory flavor on the surface. Between the staff grilling it for me and explaining how to eat it, I got to enjoy the meat even more ఇ
How do the marinated prime ribs taste?
Finally, the perfectly grilled marinated prime ribs. Taking a bite, even though the meat was thick, it wasn't tough at all — it was actually quite tender. The subtle straw-fire aroma added to it, and I could really taste the savory flavor of the meat itself ఇ

With marinated prime ribs, if the sauce is too sweet you can get tired of it quickly, but for me the combination of meat and marinade worked really well. Pairing it with tangy, crunchy side dishes rather than just eating the meat alone balanced out the marinade and made it even tastier. Dipping each piece into different sauces made the same meat taste different depending on the combination ఇ
Side dishes and the self-serve sauce bar at Jipbul Taebaek

The basic table setting came with a good variety too. Potato salad, japchae (glass noodle stir-fry), green onion kimchi, radish kimchi, pickled lettuce, and more were all prepared to go with the meat ෆ

It was convenient that wraps and sauces were available at the self-serve bar, as much as you wanted. I especially like tangy side dishes that cut through the richness of meat, and pairing them with the marinated prime ribs kept my mouth feeling fresh, so I kept eating ෆ
How the writer ate the prime ribs
With prime ribs, it was fun to switch up the pairings instead of just eating the meat plain. I tried it with pesto in particular, and it went surprisingly well with the meat. Pairing each bite with a slightly different sauce meant I never got tired of it, even by the end :)
