Busan yakitori restaurant, soy vs salt skewers: Oneul-ui Tokyo
In short
Oneul-ui Tokyo Oncheonjang is a yakitori izakaya on Oncheonjang-ro in Dongnae-gu, Busan. The order ran through tsukune, hatsu (chicken hearts), momo (thigh), seseri (neck) and the eggplant tsukune skewer, plus karaage with sake and Kirin draft beer, and the eggplant tsukune was ordered in both soy and salt to compare. Soy brings deeper umami and salt stays clean and light, and soy was the better of the two.

Inside Oneul-ui Tokyo Oncheonjang: mood and seating
Inside, Oneul-ui Tokyo Oncheonjang has four 4-person tables plus counter seats. The interior had soft lighting and a really good atmosphere.

I heard the signature dish here is Japanese-style samgyetang (ginseng chicken soup), mizutaki! But I came today wanting skewers, so I decided to save the signature dish for next time.

They said the first-order minimum is ₩20,000 or more! That includes drinks too. After that, you can order freely!

Salt and shichimi are set out on every table, so you can season your skewers to taste.

So many people were ordering skewers that they kept grilling nonstop.

Soy-marinated cabbage comes out as the basic side dish.

Sake and Kirin draft beer with the skewers
At Oneul-ui Tokyo Oncheonjang we ordered sake alongside Kirin draft beer. The sake was clean with a smooth finish, letting you enjoy its natural flavor. There was a warm option too — I'll have to try that next time.

The Kirin draft had just the right amount of carbonation and was smooth! Surprisingly clean for a draft beer.

Seseri, hatsu and momo: salt or sauce?
Each skewer at Oneul-ui Tokyo Oncheonjang can be ordered salt, soy, or sauce. First up: seseri, hatsu, and momo!

Hatsu is chicken heart, ordered with salt. It was fresh with zero off-smell, and the chewy texture was great.

Seseri is neck meat, also chosen with salt. Soft and chewy, and it got nuttier and cleaner-tasting the more you chewed!

Momo is thigh meat, ordered with sauce. It's the red sauce version! The meat was tender and nicely salty! If you like stronger seasoning, go with the sauce.

Eggplant tsukune: is soy or salt better?
The eggplant-chicken skewer (₩4,500) is a skewer with a chicken meatball stuffed inside eggplant. We ordered soy sauce first at Oneul-ui Tokyo Oncheonjang, then added one more with salt to compare.
Here's the eggplant-chicken skewer! There's a chicken meatball inside the eggplant! Ordered with soy sauce! The look of it is amazing! I couldn't wait to taste it.

Salty enough to eat plain and delicious, but dipping it in sauce adds even more nuttiness! Seriously recommend the eggplant-chicken skewer!

The tsukune quality was great too. This one was also ordered with soy sauce. No off-smell at all, really tender meat. Salty seasoning that turns clean the more you chew! Another one I'd recommend!

Since I love eggplant, I ordered one more eggplant-chicken skewer. This time I chose salt! The look was identical to the soy version! If you want umami, go soy; if you want a cleaner taste, go salt. For me, soy was tastier!

Karaage with ranch sauce
The karaage (fried chicken) comes with ranch sauce on top. You could tell it was crispy just by looking at it!

Crispy outside, juicy and soft inside. The ranch sauce was genuinely a stroke of genius! Nutty and tangy, blending well with the herb aroma for a smooth, rich flavor! Even aside from the karaage, dipping skewers in the sauce was delicious too!

Finishing with frozen persimmon
The iced persimmon is ₩4,000 and comes out frozen solid, so it's best to order it in advance. It was perfect to eat at the very end!
Condensed milk is drizzled on top of the persimmon! The cold sweetness really lifted the whole meal. Highly recommend the iced persimmon too.
