Right in front of the entrance, Think Fruit's signature soufflé sign caught my eye at a glance. I was really excited to see if such a pretty, delicious-looking soufflé would actually come out.


What is the atmosphere inside Think Fruit like?
Think Fruit's interior is decorated with a huge floor-to-ceiling window, a white-toned interior, and transparent tables and chairs. It's a space that's great for sitting back and enjoying dessert at ease.
The moment I stepped inside, the light pouring in through the big window meant there was zero sense of stuffiness — just a cool, open feeling. The overall interior, done cleanly in white tones with transparent tables and chairs, made the space look even bigger and created a calm, sentimental mood that fits today's aesthetic perfectly. It was a space that's great for sitting back and enjoying dessert at ease.

Ordering the fig soufflé: how long is the wait?
Think Fruit has two soufflé flavors — peach and fig — and this time I picked the in-season fig soufflé. Since soufflé pancakes are baked fresh to order, cooking takes a bit of time, so I'd recommend visiting with a relaxed mindset and waiting patiently. It was nice being able to choose according to taste — we went with the fig soufflé, extra sweet now that it's in season.

While looking around the café after ordering, I noticed fresh peaches and figs piled up in a corner of the counter, slowly ripening. Seeing them carefully select and manage good fruit in person made my expectations for the dessert I'd ordered shoot way up.


Do the iced Americano and condensed milk latte suit the soufflé?
While waiting for the soufflé at Think Fruit, the iced Americano and condensed milk latte arrived first. The Americano had a clean flavor that was basically the textbook pairing for sweet dessert, and the condensed milk latte I drank was appropriately rich yet smooth, with the sweetness of condensed milk spreading through my mouth — it felt like a whole day's tiredness just washed away.

While chatting over coffee, the fig soufflé we'd been waiting for finally arrived. The moment I saw it plated on the tray, I let out a "wow" — it was set up that beautifully. The soufflé, baked so carefully and evenly, with the ripe fig flesh arranged neatly on top, made the joy of eating with your eyes first pretty considerable.

On top of the golden, fluffily risen soufflé pancake sat a pretty, cloud-like dollop of white cream, giving the whole thing its visual focal point.


It felt almost too pretty to eat, but I carefully cut into it with a knife anyway. Just from the texture I felt at the tip of the knife, it was truly soft and fluffy through and through. The freshly baked, still-warm soufflé seemed to melt away the instant it hit my mouth — I was seriously moved.
