The main dish we ordered at Pork80 Jeju Airport Branch was the special-sounding 'Nanchuk Matdon'! I'd never heard of it before.

What is Nanchuk Matdon? It's a native Jeju black pork breed developed by the National Institute of Animal Science's Nanji Livestock Research Institute, combining the superior taste of traditional Jeju black pig with the advantages of improved breeds. Compared to regular pork, it has about 3 to 4 times more intramuscular fat (marbling), giving it a distinctively tender texture and rich flavor.

Can you see how thick and vividly colored the meat was when it first hit the grill? Dipping the thick cut into meljeot (fermented anchovy sauce) 😍 The ratio of fat to lean meat was fantastic, so there was no dryness — the more you chewed, the more savory flavor and juice filled your mouth 🐗🤤 My husband hates chewy meat, but here it wasn't tough at all — it had that chewy-but-springy texture specific to the skin part, and I really thought, 'so this is what truly delicious black pork tastes like'... 👍🏻

They also grill scallions alongside the meat, and wrapping them together was so good 😍 Plus there were so many great side dishes to pair with the meat that it was more satisfying than I ever expected!

From clean pickled vegetables that enhanced the meat's flavor, to lettuce wraps, seasoned raw crab, and the distinctively green-tinted matcha salt — the table was generously spread with side dishes that paired perfectly with the meat and kept us wanting more.
