Inside Pork80: modern rather than old-school grill house

Pork80 was easy to get to, just 10 minutes from Jeju Airport. The interior went for a modern design instead of the old-fashioned, worn-in look you usually see at Jeju black pork specialty restaurants.



Signature Nanchuk Matdon black pork and the banchan side dishes

Ordered the must-try dish at Pork80: the signature Nanchuk Matdon, Jeju native black pork charcoal-grilled. The side dishes were neatly put together — the scallion salad wasn't overly spicy or sour, just seasoned enough to go well with the meat.

The must-try signature Nanchuk Matdon at Pork80 isn't thinly sliced like regular samgyeopsal (pork belly) — it clearly had presence, cut noticeably thick.

Staff grill the black pork over charcoal from start to finish
It's grilled charcoal-style, and thick black pork is tricky to get right — but since staff grill it themselves from start to finish, it arrived in perfect condition.

Nanchuk Matdon is a premium breed developed by combining the strengths of native Jeju black pig and improved breeds — apparently it has more intramuscular fat than regular black pork, juicier, with a tender texture and savory flavor at the same time. They did say it's a premium breed.

The surface crisped up nicely thanks to the bincho-tan charcoal, while the inside stayed soft — great contrast in texture. Even though the cut was quite thick, the inside cooked through moist and juicy.

Staff grill it start to finish and cut it right at the perfect doneness. No dryness from overcooking, so it was easy to enjoy every bite.

Grilled scallions, mushrooms and what Pork80 costs
Grilled scallions and mushrooms were also a nice extra, available to order on top. The price felt slightly higher than the average for Jeju black pork, but considering it's not just samgyeopsal but the special Nanchuk Matdon breed plus grilling service included, it felt reasonable. Once the meat's done grilling, they grill the scallions and mushrooms too, and eating them together with the meat was a great combo. This place is optimized for anyone who wants a no-fail, delicious black pork meal in Jeju.

Warm meljeot dip at Pork80: hardly any fishy edge
I'm not great with fishy flavors so I usually avoid meljeot (fermented anchovy sauce), but at Pork80 it's served warmed, so the fishy smell wasn't strong and the umami came through rich instead. Dipping the meat lightly gave a salty umami that blended with the juices — a flavor you can only really get in Jeju. A friend who used to live in Jeju recommended their meljeot as especially good.

Matcha salt served alongside the black pork
Nanchuk Matdon has more chewy bounce than regular samgyeopsal, and the aging and freshness management were clearly well handled — no off smell at all. Instead of plain salt, they serve matcha salt, and the subtle matcha aroma paired with the saltiness brought out the meat's natural flavor even more. Especially with fattier cuts, the matcha salt cut through the richness for a clean finish.

Sides at Pork80: yeolmu radish noodles and Pork Rice
Ordered yeolmu noodles as a side, and it was pleasantly tangy — a great pairing with the meat.

Also ordered Pork Rice, a vegetable bibimbap mixed with meljeot — a real treat. It was a satisfying side to have alongside the meal, and since we were already full of black pork, adding one Pork Rice to share was a good call.
