Don't we all carry a bit of a bias when it comes to marinated pork ribs — that the meat is somehow lower quality, or that it's just drowned in heavy sauce to mask it? I was the same way. Pork ribs, to me, were always about the sauce, not something you'd expect real meat quality from.
But this place completely shattered that preconception! From how the meat is trimmed, to the lineup of side dishes, to the stew we had for our meal — every single thing was flawless, and I kept letting out little gasps the whole time we ate.

Truffle potato salad, shrimp sesame oil sauce, barley baek-kimchi (white kimchi), wild garlic wasabi... honestly, it gave me decision paralysis. Everything was so good it was hard to pick what to eat first.

They said they hand-trim the meat themselves every single day, and you could feel that craftsman's touch from the very first cut.

The signature marinade isn't overly sweet or harsh — it's a pleasant, mild sweetness that soaks all the way through the meat, so good you could eat the meat completely on its own without any side dishes and it would still taste complete, no sauce needed.

The meat quality itself was so~ good, and the fat-to-lean ratio was so good that I was happy the entire meal, ugh. Eating it with the shrimp sesame oil sauce made the nutty sesame oil and shrimp umami explode — an incredible pairing with the meat.
The special sauce, ugh... it's actually infuriating how good it is. Even when you dip the meat in deep like that, it's not salty at all, so I just kept dunking it in nonstop haha.

Maybe because it was simmered so long, the meat was so tender the bone practically fell right off.
The kimchi went in whole-head too, so there's the fun of snipping it apart with scissors, and the texture landed right in that sweet spot between crunchy and soft — just perfect. Thanks to the deep, cool, spicy broth, even though I was already full, I couldn't help but order an extra bowl of rice. 🍚✨
