This time I went with my boyfriend on a weekday evening to Gilchon Sutbul Galbi in Seomyeon.

Gilchon Sutbul Galbi in Seomyeon: weeknight atmosphere and seating
Gilchon Sutbul Galbi Seomyeon Main Branch's main dishes are fresh pork ribs and marinated pork ribs, and we tried the fresh pork ribs this time. Even on a weekday evening it was pretty crowded — proves once again that Seomyeon's popular spots stay busy even midweek haha.

The inside was set up with tables partitioned off into separate sections. That meant we didn't feel too crammed next to the neighboring table, and it was easy to chat comfortably while eating.
There was a range of seating from 4-person tables to larger group tables, so it worked well for just the two of us and would also be fine for a bigger group coming for BBQ.



Besides fresh pork ribs and marinated pork ribs, there was a wide range of sides and meal dishes available too :)


What banchan comes with the meal, and how the self-serve bar works
Once we sat down, the banchan (side dishes) came out first, and I was surprised by how many kinds there were 👀 Shrimp sesame oil sauce, jeotgal, wasabi, pink salt, ssamjang, and also baek-kimchi, pa-jeori, lettuce wraps, garlic scapes, potato salad, radish, soy-marinated onion — so many! With such a variety to pair with the meat, it seemed like a great chance to mix and match according to taste.

And if any banchan ran low, we could easily grab more from the self-serve bar.

Squid muchim, the sweet-and-sour side
First came the squid muchim, and this was totally a soju-pairing dish!

It was sweet and tangy, the squid was chewy, and the seasoning was spot on — I really enjoyed it. What stood out most was how big each piece of squid was; I kept noticing the size while eating!

How do Gilchon's charcoal-grilled fresh pork ribs taste?
And now for today's main: fresh pork ribs! The color of the raw ribs looked amazing.

Along with the fresh pork ribs, potato and scallions were also prepared, and everything was grilled to a golden brown over charcoal.

Once the meat was well grilled, one bite delivered a burst of savory flavor along with juicy meat juices — so good!

The meat was delicious on its own, but since so many sides came along with it, it was fun trying different combinations.

How to eat the ribs with shrimp sesame oil sauce and grilled scallions
Let me share a few ways to enjoy it, based on some tips!

We tried dipping the meat lightly into the shrimp sesame oil sauce! The salty shrimp sesame sauce blended really well with the meat :)


We also tried putting meat on grilled scallions along with the squid muchim, and each combination gave a slightly different feel, so we kept trying different things!
Barley shrimp doenjang stew
After eating a good amount of meat, we also had the barley shrimp doenjang stew. It's called that for a reason, haha.

It was packed with barley shrimp, so the umami from the shrimp really came through, and the savory doenjang flavor combined with a bit of spiciness paired well with the meat 😀

Tofu and other ingredients were in there too, so it was also good to eat with rice after the meat.

Finishing with half-and-half naengmyeon
We finished up with half-and-half naengmyeon! When you want both mul-naengmyeon (cold noodle soup) and bibim-naengmyeon (spicy mixed cold noodles), it's hard to choose just one, right? Haha.
That's when ordering half-and-half naengmyeon is perfect! Being able to have both the broth version and the mixed version together made for a great dessert after the meat!

They also gave us vinegar and mustard on the side, so we could each add it to our own taste.

Would I go back to Gilchon for fresh pork ribs in Seomyeon?
After eating here at Gilchon Sutbul Galbi, everything was delicious, from the fresh pork ribs to the squid muchim, doenjang stew, and naengmyeon.

The fresh pork ribs stood out most to me — meat that burst with juices, paired with garlic scapes, scallions, and squid muchim in all sorts of combinations, made for a really fun meal.
With plenty of banchan and a self-serve bar for more, it was a great place to enjoy the meat in many different combinations.
If you're looking for a place to eat pork ribs in Seomyeon, this seems worth a visit. We had a really, really delicious time that day :)
