Why marinated pork ribs in Seomyeon this time
The pork rib place I used to go to often in Seomyeon closed down, so I hadn't had marinated pork ribs in a while. On days when I craved meat I usually went for pork neck or belly, so eating marinated pork ribs again after so long felt like a nice change of pace.


Gilchon Sutbul Galbi, near Seomyeon Station, lets you enjoy charcoal-grilled fresh pork ribs with draft beer. The yellow signboard glow really stood out in the alley, so it wasn't hard to find.

By the entrance, glass display cases held onggi jars covered with hanji paper, lit up nicely. There was a phrase about 'special marinated ribs aged in secret aged soy sauce' — maybe those jars held that soy sauce? I probably should have asked staff. ☺️



What the Gilchon dining room and wait are like
Gilchon Sutbul Galbi Seomyeon Main Branch has a spacious, comfortable interior, perfect for families, friends, or company dinners. We went in on the early side and sat down with no wait, but by the time we looked up mid-meal, the place was packed. You can register for the waitlist through Catch Table, just so you know ;)


Ordering is simple via kiosk. There's a cutout in the corner of the table holding tongs, scissors, paper cups, and the meat mesh — practical and thoughtfully set up.

How to order and grill at Gilchon Sutbul Galbi
The suggested order on the info card is: fresh ribs > marinated ribs > half-and-half naengmyeon. For fresh ribs, they recommend wrapping with shrimp sesame oil sauce and water dropwort, dipped in fermented shrimp sauce; for marinated ribs, pairing with baek-kimchi (white kimchi) and wild garlic wasabi is supposed to be delicious. They also say a piece of marinated rib on top of the suhyangmi rice is great. Read the info card and try a few combinations yourself ;)

Side dishes at Gilchon, with no table setting fee
Gilchon Sutbul Galbi doesn't charge a table fee, yet the side dishes were plentiful and neatly arranged. Every sauce and vegetable was tasty. 👍🏻 The shrimp sesame oil sauce, barley baek-kimchi, and potato salad in particular stood out from other BBQ places and made a real impression.

Draft beer with charcoal-grilled pork ribs
Eighty percent of the reason I came to this restaurant is that you can enjoy draft beer with the meat. I personally love the combination of charcoal-grilled pork ribs and draft beer, and since places serving draft beer are rare, a spot like this feels precious.


The 400g marinated pork rib platter
We went as two and ordered a 400g platter of marinated pork ribs. Fresh ribs are good too, of course, but for pork ribs, the marinade somehow feels like the truth, so we went with marinated. If there had been three of us, we'd have done the fresh-rib-then-marinated course, but with just two, we had to pick one.

For spicy pepper lovers, they prep sliced hot peppers with the pickled onions ;)

Barley shrimp doenjang stew and rice
A doenjang (soybean paste) stew unlike others! With barley shrimp mixed in, it was clean and refreshing, so my chopsticks kept going back to it while eating meat. The tofu was left uncut in one big piece — rustic but appealing. The rice was genuinely delicious; apparently it's suhyangmi rice.


Squid muchim (squid tossed in a sweet-and-sour sauce)
We also ordered squid muchim, which pairs even better with marinated ribs. The tangy vegetables and tender squid, eaten together with the pork ribs, made everything taste fresher and better.


How the ribs tasted, and what fell short
I'm not great at grilling meat, so I tend to go to places where staff grill for you. But Gilchon Sutbul Galbi has enough going for it — value, great side dishes, a marinade that isn't too sweet, cold draft beer, good atmosphere — that I'd want to come back even without table-side grilling. My one complaint: since I don't eat fat at all, I wish there had been more lean meat. 🥲
Dipping the meat in shrimp sesame oil sauce and pickled onions, yum yum yum ;) Grilled to a nice golden brown, the meat was tender and the marinade — aged in secret soy sauce — soaked in well. Good stuff!


We wrapped it with squid muchim, ate it plain, tried all sorts of combinations. The rib meat closest to the bone was the best part 😉
