Today I want to introduce a really special and charming Korean BBQ restaurant in Galma-dong, Seo-gu, Daejeon.

If you've eaten out for meat enough times, you'll agree that how the meat is grilled matters just as much as its quality. The place I'm introducing today is Gildon, a Galma-dong favorite where the owner — who spent five years building up skill from the ground floor of the BBQ business — grills the meat personally, so you get the best juiciness and flavor. From the convenient free parking in the building to a detailed review of the signature menu, read on to the end!
Where is Gildon, and where do you park?
Gildon is located at 186 Singalma-ro, Seo-gu, Daejeon, 1F Unit 121 of the Gallery Hurium commercial building, and offers free parking in the building's underground lot. Parking is one of the biggest headaches when hunting down a good restaurant.
Around Galma-dong or Dunsan-dong, the alleys are narrow and parking is often scarce, so driving there can feel like a hassle. Gildon takes that worry completely off the table!
- Address: 186 Singalma-ro, Seo-gu, Daejeon, 1F Unit 121, Gallery Hurium commercial building
- Location tip: Near the Galma 1-dong Community Service Center, inside the commercial building of the Gallery Hurium apartment complex, so it's very easy to find.
- Parking: Free parking is available in the building's underground lot! Even guests arriving by car can enjoy a stress-free meal.
The story behind the Gildon name
What makes Gildon special isn't just the meat — it's the owner's firm philosophy and care behind it.
The owner started out as a part-timer at a BBQ restaurant and spent five years learning the trade from the bottom up, step by step. He says his greatest pride comes from watching customers enjoy the meat.
Cleanliness, service, and taste are his top three priorities, and he does his best to give every single guest an enjoyable meal. His sincere hope — that one day everyone across the country can enjoy delicious meat — really comes through in both the flavor and the service.

Hanok-style interior and opening hours at Gildon
Gildon isn't a huge space, but it's cozy and neat, and the interior — reminiscent of a traditional hanok house — feels calm and comfortable. I've had plenty of meals at big, loud restaurants where the food was good but the noise left me flustered.
- Hours: 17:00–23:55
- Last order: 23:00
- Closed: Every Wednesday
What it's like when the owner grills your pork
One of Gildon's biggest perks is the textbook definition of hands-off comfort: someone grills it for you. No worrying about burning the meat, no one person stuck grilling while everyone else eats — a pro grills it to the perfect doneness, locking in the juices.
Side dishes served with the meat

So many places have self-serve side dish bars these days, but at Gildon they kept refilling my extra orders without ever making me feel like I was asking for too much. It felt like being genuinely taken care of, and the banchan itself was delicious.
Which cuts does Gildon recommend?

Flower pork neck (15,000 won)

This is Gildon's true signature dish. It uses flower pork neck from Iberico, one of the world's four great delicacies, with fantastic marbling. Grilled crisp on the outside and juicy inside, it bursts with flavor and savory richness in every bite. None of the usual dryness of pork neck here — it's chewy yet tender. Genuinely delicious.
Flower pork belly (15,000 won)

The bones are cleanly removed for a perfect balance of chew and convenience. The ratio of lean meat to fat is spot on, and the smoky char mingling with the pork belly's richness makes it impossible to put your chopsticks down.
Galbisal and hangjeongsal (15,000 won each)

These cuts have a chewy texture with a savory depth that builds the more you chew. I kept eating without even noticing I was getting full.
Kimchi jjigae and doenjang jjigae to finish

The kimchi jjigae (kimchi stew) has a spicy, deep broth. The savory doenjang jjigae (soybean paste stew), rich with meat and a hearty broth, pairs perfectly with the grilled cuts and is a total rice thief. It's a must-order dish that cuts right through the richness of the meat!
