Straw-fire scented woodae galbi so good even my meat-loving husband approved.

Signature straw-fire grilled woodae galbi at Jipbul Taebaek Dongtan Flagship Branch

This time I visited Jipbul Taebaek Dongtan Flagship Branch, a restaurant I found while looking for Yeongcheon-dong food spots in Dongtan. It's a place where you can enjoy both Taebaek highland kimchi and straw-fire grilled woodae galbi (premium beef short rib). I went with my husband, who's very serious about meat, on a weekday lunch, and afterward he said he'd finally found a great restaurant again haha. He even said we should bring the kids next time.

Jipbul Taebaek Dongtan Flagship Branch is located at 11-8 Jisan 2-gil, Hwaseong-si, Gyeonggi-do, in the 11-jasangga commercial strip in Dongtan. It's open daily from 12:30 to 22:30, with last order at 21:50. Parking is available in front of the restaurant, and there's also street public parking nearby.

This place is listed in the Blue Ribbon guide, so I was curious about it even before visiting.

They also have a table management system set up for busy times. We visited on a weekday lunch and got seated right away, but it's worth keeping in mind for weekends or peak meal times.

The street public parking around the restaurant is free for the first 1.5 hours, and if you use the paid Deokhoe P Tower parking lot about a 2-minute walk away, you get one 2-hour parking voucher per table. We came by car and didn't have much trouble with parking.

On one side of Jipbul Taebaek Dongtan Flagship Branch, there's a glass-walled area where you can watch the straw-fire grilling happen. Inside, cute little props scattered around the restaurant gave it a cozy feel.

You can watch the meat being initially seared right in front of you, and seeing the open-flame grilling up close made the wait not feel boring at all.

Jipbul Taebaek uses rice straw and charcoal to sear the meat at high heat, adding that distinct straw-fire aroma. Infusing the meat with this unique scent is the restaurant's signature.

Our woodae galbi order arrived. They said they use the whole flower short rib section (grades 6–8) from the beef rib area, smoked over straw fire. Since it came out as a whole piece, the visual alone caught my eye.

Beef ribs still attached to the bone aren't easy to grill yourself, but here a staff member grills it for you directly.

Since they watch the meat's condition while grilling, we didn't have to worry about timing and could just focus on eating — very convenient.

Once the meat was fully grilled, they placed it on top of the bones so it wouldn't burn. Nice touch haha.

Side dishes and the 6 dipping sauces at Jipbul Taebaek

The basic side dishes at Jipbul Taebaek Dongtan Flagship Branch include a variety like mu-saengchae (spicy radish salad), pa-kimchi (green onion kimchi), lettuce salad, japchae (glass noodle stir-fry), and a sweet-and-salty potato salad. The potato salad has a sweet, salty flavor that's great to pair with the meat every so often.

There were also several sauces to dip the meat in. Black sesame salt, a special soy sauce, ssamjang (seasoned soybean paste), chamnamul dangwi pesto (mountain herb pesto), neungi mushroom sauce, and wasabi were all prepared. Each sauce had a different aroma and flavor, so we could enjoy the same meat in a variety of combinations. I had fun switching between them.

Kimchi, gosari (fernbrake), and mushrooms were also grilled on the pan alongside the meat, and they went well with the woodae galbi.

How does the marinated woodae galbi taste on the first bite?

Of course you have to try the first bite of well-grilled woodae galbi plain. Since the ribs were already seasoned, it tasted plenty good even without any sauce or side dishes. The subtle straw-fire aroma came through and the meat was tender, so it suited my taste from the very first bite. Exactly the flavor I wanted 👍🏻

After that, we switched between the sauces one by one. No matter which combination, it went well with the ribs.

The grilled kimchi, gosari, and mushrooms were also delicious 🤤 After we finished the meat, they cut off and grilled the meat still clinging to the ribs. Since it was meat attached to the bone, the texture had a bit more bite, so we ate it up thoroughly to the end. Woodae galbi isn't easy to grill yourself, but having a staff member grill it from start to finish made the meal comfortable.

Is Jipbul Taebaek Dongtan good for a family meal or a group dinner?

If you're looking for straw-fire grilled woodae galbi in Yeongcheon-dong, Dongtan, Jipbul Taebaek Dongtan Flagship Branch is worth remembering. Since staff grill the straw-fire scented woodae galbi for you, it would also be comfortable for a family meal out or a gathering with several people.
