Craving meat during a Busan trip, we headed to Seokok Galbi in Jung-dong, Haeundae.

When we first walked in, there was a CatchTable tablet outside, and I figured it was just there in case of a wait — but on our way out, the line outside was absolutely packed.

Customers kept streaming in the whole time we were eating, and most of them looked less like tourists and more like locals coming in for a regular meal. It wasn't until I saw the crowd waiting on our way out that I realized that tablet outside wasn't just for show.

We ordered 2 servings of jangin galbi and 4 servings of heukdon galbi, and since the two are completely different styles, our preferences ended up split down the middle.

I personally preferred the unmarinated jangin galbi, while the kids were completely hooked on the soft, marinated heukdon galbi and tore through it.

On top of that, we rounded things off properly with sagye sotbap and cold noodles.

How long is the wait at Seokok Galbi?

The first thing I noticed walking into Seokok Galbi was just how many customers were there.

Customers kept coming in the whole time we ate and the place stayed pretty crowded. At first I didn't pay much attention to the CatchTable tablet by the entrance, but once we finished eating and stepped outside, the waiting crowd was huge.

A lot of the customers looked like they'd come from nearby for a meal rather than tourists just passing through, so it felt more like a neighborhood spot than a tourist stop. If you're visiting during a busy time like dinner or the weekend, it's probably worth checking the CatchTable wait before you go.

Both are pork galbi, but they taste completely different, so I'm glad we ordered both and compared them side by side.

Jangin galbi: clean-tasting and chewy unseasoned ribs

Personally, I preferred Seokok Galbi's jangin galbi.

Since it's unmarinated pork rib, you really get the taste of the meat itself — clean and chewy in the best way. Not tough-chewy, but the kind where the more you chew, the more meat flavor comes through.

If you prefer plain meat over marinated, I'd recommend starting with jangin galbi. The potatoes, eggplant, and rice cake that came alongside were also great grilled on the pan between bites of meat.

Heukdon galbi, the marinated ribs the kids ate most

The kids, on the other hand, went much harder for the heukdon galbi.

It's thinner and more tender than the jangin galbi — genuinely soft. We joked that you could probably chew it with your gums, it was that soft.

The marinade wasn't overpowering and soaked into the meat nicely, and once it's grilled and the sauce chars slightly on the outside, that sweet-salty flavor really comes alive.

The kids ate so much it actually surprised me. They usually like meat, but that day they kept asking for more heukdon galbi and we ended up finishing all 4 servings.

A day when the adults' and kids' preferences split cleanly — plain rib for the grown-ups, marinated rib for the kids.

There was lettuce and perilla leaves, scallion kimchi, mustard leaf pickles, water dropwort pickles, and kelp, plus chili peppers, garlic, and scallion salad you could help yourself to.

There wasn't just one sauce either — options like MZ mala sauce, seasoned fish roe, and whole sesame ssamjang meant you could switch up the combo between bites of meat, which was fun. It was handy being able to help yourself to as much as you wanted, and since we love wraps, we went back and forth a few times.

After the meat, sagye sotbap

It felt like a shame to stop at just meat, so we ordered sagye sotbap too.

The hot pot rice that came out when I visited was piled high with corn, and it came with seaweed and seasoning to mix in. The warm rice with pops of corn was a great way to follow up all that meat.

Following the instructions provided, we first tasted the rice plain, then wrapped it in seaweed, and finished with sungnyung (scorched rice tea) at the end.

It definitely felt like a proper meal, way more satisfying than just having plain rice at a barbecue place.

Finishing with bibim milmyeon

You've got to finish meat with noodles, right? So we wrapped up with bibim milmyeon.

It came topped with cucumber, radish, and egg in a spicy sauce, and it was a great way to follow the meat. Especially after the marinated heukdon galbi, one bite of the bibim milmyeon really cleaned the palate. Saving a bit of meat to wrap with the noodles was also a great combo.

Is Seokok Galbi worth it for pork galbi in Haeundae?

For me, the plain, chewy jangin galbi was the pick; for the kids, it was the tender, well-seasoned heukdon galbi. Even though they're both pork galbi, the styles are clearly different, so if it's your first visit, it's worth ordering both to compare.

And above all, the crowd waiting when we left was genuinely surprising, so if you're visiting during a busy time, go in expecting a wait. We came looking for a proper meat meal in Busan and left completely full.
