The black pork I ordered finally arrived 🤭 As you can see in the photo, the meat comes sliced pretty thick.

The neck and belly come out together, and since it's not just tossed straight onto the grill but already gone through a pre-searing step, I was excited even before eating.

Apparently, at Nopo Dwaeji, the black pork is aged, then seared over high heat using barley straw, and then grilled once more over charcoal. Maybe that's why the aroma rising off the meat once it hit the grill was so good 🔥

Personally, this felt like Nopo Dwaeji's signature move. The aged black pork gets seared first over barley straw and then grilled again over charcoal. In the photos, you can see the meat turning a mouthwatering golden brown with juices rising to the surface, right? 🤤

Especially with such thick cuts grilled over charcoal, the outside came out golden and crisp while the inside stayed moist. You could really feel black pork's characteristic chewy texture, with the savory fat and juices coming together — this is what eating black pork in Jeju is supposed to taste like.

I alternated between the neck and belly that came out together, and personally I enjoyed comparing the texture difference between the two cuts.

The neck had a clean, thick, meaty texture that I liked, while the belly had that extra savory fat that builds up flavor the more you chew! Since it's a geun-gogi menu that gives you both cuts instead of just one, I never got tired of it and kept reaching for more 🥩✨

Different ways to eat the black pork

The meat is tasty just dipped in salt, but it was also good wrapped with fresh lettuce or dipped in the provided sauces.

Especially since charcoal-grilled black pork has such a great aroma on its own, I'd recommend trying it simply with salt first to taste the meat itself. And wrapping it with fresh vegetables in between cleans up the richness nicely, which kept me eating more and more 🤭

  • 24-hour aged kimchi jjigae ₩8,000 — a jjageuri-style kimchi jjigae with pork and tofu! Good to order alongside the meat when you're craving a spicy broth.
  • Water naengmyeon ₩8,000 — clean, cool broth with chewy noodles, refreshing to finish off a meat-heavy meal.
  • Bibim hoe naengmyeon ₩8,000 — apparently a sweet-and-tangy dish combining seasoned pollack and an icy broth.

If you like naengmyeon (cold noodles) to finish off a meat meal, bibim hoe naengmyeon would suit you well. And kelp rice is only ₩1,000, so it's good to add if you want to have it alongside the meat and jjigae.

We were too full and just left after the meat, but I'm definitely trying it next time we come back haha
