My husband had errands near Sindorim, so I tagged along and looked up good restaurants nearby. I remembered Sambaekga on the first floor of the same building I'd noticed during a trip to Homeplus Sindorim, so I went without much hesitation.

Browsing the table-order screen, my husband declared "jokbal always goes with makguksu," but with the weather turning cooler I was craving warm broth, so I chose the [Jokbal + Kalguksu Set]. 💡 Kalguksu tip: You can choose between clam, spicy, or perilla kalguksu. Since my husband and I are both perilla addicts, we didn't hesitate to switch to perilla kalguksu.

While waiting for the food, office workers with lanyards kept streaming in from nearby, and the place filled up in no time. Some ordered the set like us, others went for the lunch specials of kalguksu or sundubu jjigae (soft tofu stew) — you could really feel this was a genuine local favorite for Sindorim's office crowd.

Ordering the set at Sindorim Sambaekga comes with naengchae jokbal (cold jokbal salad) included. Along with the order, chive salad, dried radish salad, and geotjeori (fresh kimchi salad) were neatly laid out with ssamjang, salted shrimp, and garlic sauce. The complimentary naengchae jokbal in particular turned out to be a real twist!

I don't usually eat naengchae jokbal much, but the chewy jokbal coated in a tangy, sweet-and-sharp mustard sauce instantly woke up my appetite before the meal even started. It was so good I thought, "Next time I should order naengchae jokbal as the main dish."

Finally, the star of the show: the jokbal! The portion was generous, and even before tasting it, the glossy brown color hinted at just how chewy it would be.

Texture and flavor: the skin had a springy, satisfying chewiness that stuck to your mouth, while the meat underneath was moist and tender, releasing a deep, savory pork flavor the more you chewed. The ratio of lean meat to fat was just right, so it never felt dry all the way through.

The signature of the day, garlic sauce: the lettuce wraps and chive salad were great too, but the real best kick of this jokbal was, without a doubt, the garlic sauce!

Sindorim Sambaekga's perilla kalguksu (들깨칼국수) is known for its thick, creamy broth loaded with perilla seeds. It arrived while we were still deep into the jokbal, and the moment it hit the table, a rich perilla aroma filled the air.

Harmony with the noodles: the chewy, soft kalguksu noodles were coated in the rich perilla broth, and every bite filled the mouth with nutty flavor. Paired with the restaurant's signature homemade persimmon geotjeori, the seasoning was spot-on and delicious.

Rich perilla broth: packed with perilla seeds, the broth had an impressively thick, creamy texture. It wasn't overpowering, but had a nutty, deep flavor that warmed and comforted the stomach. "Jokbal goes with makguksu" is usually the go-to formula, but with the cooler weather, pairing it with warm, nutty perilla kalguksu instead warmed us up and made for a much heartier meal!

The food was delicious and well-prepared, but what stayed with me most was the staff's thoughtful, friendly service. Even during the busy lunch rush, they greeted every single customer warmly and helped make the meal enjoyable — it left me in a great mood throughout.
