Cheonan noodle soup restaurant, brisket yukkalguksu lunch: Yukdaejang
In short
Yukdaejang Cheonan Baekseok Branch is a brisket yukgaejang (spicy beef soup) and yukkalguksu (spicy beef knife-cut noodle soup) restaurant on Handeul 2-ro in Baekseok-dong, Cheonan. Over a weekday lunch with mom, the writer ordered brisket yukgaejang and brisket yukkalguksu, fished out the noodles first, then stirred a bowl of rice into the leftover broth, and parking was never a worry thanks to the large lot outside. Yukdaejang tastes the same from branch to branch, so it is an easy choice for a hearty, spicy lunch or a hangover cure.

Mom suggested we grab a bowl of yukgaejang (spicy beef and vegetable soup) for lunch, so off we went to find a good spot. There are plenty of yukgaejang brands out there, but these days Yukdaejang feels like it's in a league of its own. No matter how many times I visit, it never disappoints, and there's barely any difference between branches — you get solid flavor wherever you go.
Yukdaejang Cheonan also has a pretty spacious parking lot, so it's a great lunch spot if you're driving and don't want to worry about where to park.

What brisket yukgaejang and brisket yukkalguksu look like
The brisket yukgaejang arrives filling a large stainless steel bowl to the brim. The moment it's set down, the deep red broth completely takes over your attention.

Thick-cut green onions add a bright pop of green over the red broth, and when you dig in with a spoon, shredded brisket-adjacent yangji beef and chunky beef brisket come piled up generously. The brisket yukkalguksu comes packed with wavy, chewy knife-cut noodles swimming in the same rich yukgaejang broth — it's appetizing just to look at.

The red seasoned broth soaks fully into every strand of noodle, and there's a generous amount of brisket to pick up with your chopsticks — real proof of why this is one of Cheonan's go-to yukgaejang restaurants.
How the broth and knife-cut noodles tasted
The broth, rich with the deep savoriness of brisket and the refreshing umami of green onion, hits the spot the moment you take a sip — it feels like it clears your whole system. Pull up the springy, chewy noodles from the brisket yukkalguksu and you get a great chew along with the spicy broth, pairing perfectly with the savory meat.

The trick: rice stirred into leftover yukkalguksu broth
When you're really hungry, here's the tip: order the brisket yukkalguksu, enjoy the noodles first, then add a bowl of rice to soak up the leftover broth. Break up the fluffy rice in the broth, top it with chunks of brisket and green onion, and you've got a hearty, sweat-inducing, perfect meal.
