I was looking for dinner in the Garak Market food alley when I ended up at Midang Hanwoo Gopchang. I've eaten gopchang and daechang plenty of times before, but I heard this place lets you try a whole range of hanwoo (Korean beef) offal cuts at once — gopchang, daechang, makchang, plus beef tripe, heart, and honeycomb tripe — so I was curious.

What stood out most is that they use hanwoo hand-selected by an NH Nonghyup livestock wholesaler, and the space used to operate as Midang Mungtigi before being reborn as a hanwoo gopchang specialist haha. If you're hunting for a good gopchang spot around Garak Market or Munjeong-dong, this one's worth keeping in mind :)

Walking up to the Garak Market food alley, the Midang Hanwoo Gopchang sign caught my eye right away! From the entrance alone it clearly read as a hanwoo gopchang specialist. Out front, a sign listed all the cuts you could enjoy together — gopchang, beef tripe, makchang, daechang, heart, honeycomb tripe, and more.

From Midang Mungtigi to Midang Hanwoo Gopchang

Inside, there was a sign explaining Midang's philosophy (the middle photo is the owner haha). It used to run as Midang Mungtigi, serving same-day butchered hanwoo mungtigi (raw sliced beef), yukhoe (beef tartare), and hanwoo gopchang jeongol, but they've since changed business types and now run as Midang Hanwoo Gopchang.

What caught my eye was a note saying the owner personally inspects and selects the hanwoo. Seeing that, I got the sense this isn't a gopchang place that relies purely on seasoning — they clearly put real care into the raw ingredients themselves.

I gave the menu a look too. The signature offerings are hanwoo gopchang along with daechang, makchang, beef tripe, heart, and more offal cuts! You can order just one cut, but if it's your first visit, going for a set with a variety of cuts seems like the way to go. For meal dishes, they also had things like gopchang jeongol and doenjang jjigae to pair alongside.

After ordering at Midang Hanwoo Gopchang, the basic side dishes get set out first — chive salad, kimchi, garlic, sauce, and other classic gopchang pairings.

What personally caught my eye was the cheonyeop (beef liver/omasum)! It had that nutty, crunchy texture that's hard to resist — great for picking at before the main dishes even arrived. The accompanying sauce cut through the richness too, perfect alongside the gopchang!!!

And then, the main event! The grill came out so full it was practically overflowing. Gopchang, daechang, makchang, heart, and more all piled on together, alongside sides like kimchi, chives, and potato to grill along with the meat.

Doesn't this look ridiculously fresh?!? Grilling several cuts together like this instead of sticking to just one is way more fun — you get to compare the textures and flavors side by side haha. I could genuinely eat this endlessly!!!!

How the texture differs from cut to cut

The heart was relatively clean-tasting and chewy, while the other cuts each had their own distinct crunch or softness, so it was fun picking through them one by one. Especially since it included cuts you don't often see at a typical gopchang restaurant — anyone who loves gopchang would be even more satisfied here.

Chewy cuts, crunchy cuts, soft cuts — they're all different, and personally I think enjoying that range of textures is what a gopchang restaurant is really about haha. Whether you usually like something soft and rich like daechang, or you prefer something with more bite like makchang or tripe, this place seems like a good pick to go with anyone.
