Interior of Gohyang Sogalbijjim Gwacheon with plenty of tables

Side dishes, the self-serve bar and the rice

At Gohyang Sogalbijjim Gwacheon, each table has seasonings you can adjust to taste. They especially explained that if you like it spicy, you can add more chili powder!

You get these three basic side dishes — I ate the bean sprouts mixed in with the rice haha.

Self-serve bar for taking extra side dishes

A Gwacheon galbi spot, a sogalbijjim spot — Gohyang Sogalbijjim. If you want more or extra side dishes, you're free to grab them from the self-serve bar, haha.

Bowl of multigrain rice instead of plain white rice

The rice isn't just plain white rice either, which is totally my thing haha. Multigrain rice can be a little hard on my stomach, but plain white rice makes me feel a bit guilty, like I'm not taking care of my health? So when a place serves rice that isn't just plain white, it feels like they put in extra thought, and I like that.

Braised beef short rib prices and what comes with the set

They bring the food to your table once it's ready! The basic set is ₩11,900, and if you order the extra-large at ₩13,900, the composition is the same but you get a bit more meat!

Sauce-soaked sogalbijjim at Gohyang Sogalbijjim Gwacheon

Recommended as a Gwacheon sogalbijjim spot — Gohyang Sogalbijjim Gwacheon. They say the sauce, made with a 40-year secret soy sauce and chili powder recipe, soaks right into the meat, making it an addictive galbijjim.

Galbijjim set meal served with doenjang stew

It's a big, generous spread, so this is why I'd recommend it to anyone wanting a hearty set meal. It even comes with doenjang stew (soybean paste soup), making it feel completely full.

I also tried the tteokgalbi (grilled short rib patty), and the meat texture and juiciness were spot on — proper tteokgalbi!? I thought people who like spicy food, or families dining with kids, would both enjoy it and the kids would love it too. I kept reaching for more without even noticing, and ended up cleaning the whole plate!

Sogalbijjim bones with thick meat attached

Can you see those huge bones and the thick chunks of meat?

Tender rib meat separating easily from the bone

So tender that it comes apart easily when you grab it — getting ready to pull the meat off the bone and cut it up into bite-sized pieces for a fun feast.

Galbijjim meat cut into bite-sized pieces

Recommended as a Gwacheon sogalbijjim spot — Gohyang Sogalbijjim Gwacheon. The ribs are cooked so tender the meat practically falls off the bone, and the sauce has soaked deeply in — just look at this!

How to mix the seaweed-flake and bean-sprout bibimbap

The galbijjim at Gohyang Sogalbijjim Gwacheon is great just picked apart and eaten as is, but adding the gimgaru (dried seaweed flakes) on the table, tossing in the basic bean sprout side dish, and mixing it all with the meat and sauce — this is the best!! It's even shown on the tablet order screen as 'how to eat deliciously,' so follow along and make yourself a bibimbap (mixed rice) — you have to try it!

Why the potato noodle add-on is worth ordering

And another thing I'd recommend — add the potato noodles! Once you've finished eating, you toss them into the leftover sauce and mix them in.

Potato noodles mixed into the leftover sauce

It has its own charm, different from the rice — the noodles have this springy, soft, chewy, just-right texture that's really great to enjoy. And maybe because they give you extra sauce, the noodles hold onto it well, so even mixed in at the very end, they're plenty coated in sauce and absolutely delicious.
