I was trying to figure out what to eat for dinner in Busan and ended up at Bupyeong Yang Gopchang (부평양곱창)! It's a yang gopchang place tucked into a Nampo-dong alley, with such a good atmosphere and tasty food that it's become my real go-to spot every time I visit Busan ✨

It's in an alley near Kkangtong Market, so it's great to stop by while wandering around and sightseeing. It's also close to Jagalchi Station, so I'd recommend it for a walking-tour itinerary too! There are public parking lots nearby, so it's not hard to visit even if you're driving.

What's the late-night weekday outdoor stall atmosphere like?
I went on a quiet weeknight late at night, but this place has been beloved for 30 years straight, so there's a wait on weekends and in the evenings. There were plenty of Busan locals as well as domestic and international tourists. The outdoor tables had that distinct old-school Busan feel, which really made me feel like I was traveling 🫶 It's loud and lively, but that's exactly the charm that made it even better!
The interior vibe and renovated restroom

The inside was cleaner than I expected, and the staff are always friendly. It's on the spacious side, so it'd be great for group gatherings or company dinners too! Once you order, they get things ready right away, and the food comes out pretty fast. They also recently renovated the restroom! That was always the one thing that bugged me on past visits, so it was so nice to be able to use a clean one this time >,<

All three menu items are delicious, but the stone-pan seasoned is my number one pick! Don't forget to add extra noodles either >,< I heard both the stone-pan seasoned and beef tripe hot pot can be ordered spicy too!

They bring out a good variety of side dishes, so there's plenty to nibble on while you wait. There's warm broth served alongside too, which pairs really well with the spicy seasoning, and the fresh seasoned greens (geotjeori) are especially good haha.
An honest review of the medium stone-pan seasoned gopchang

We ordered the stone-pan seasoned 🔥 It comes out piled high with intestine and vegetables on a huge stone pan, and honestly the visual alone is insane... The sauce here is seriously incredible ♡ We always used to order the small (₩40,000) for two of us but felt it was a bit lacking, so this time we got the medium (₩45,000). Definitely more generous, right?
It was also nice that the staff cooked it right at the table for us! They take care of it from start to finish, so all you have to do is wait for it to cook through haha.

The sauce has such deep umami that you keep reaching for more. It's a little spicy with a touch of sweetness too, so it's perfect with drinks 🍺 The mushrooms and onions cooked in with it are also so good, and don't even get me started on the intestine..🥹❤️

See how plump the intestine is? Zero funky smell, genuinely savory, and it pops the moment you bite into it — the texture is insane. A must-visit spot when you're in Busan 👍
Finishing with udon noodles and fried rice

First we ordered the udon noodle sari. The sauce is so good that whatever you add is a guaranteed win >,<

And then they make fried rice too. I always have to finish with both udon noodles and fried rice...^^ hehe


Since it was a weekday visit, we also got complimentary steamed egg and patbingsu (shaved ice dessert). We ate dessert to the very end too, hehe 🩷
