Today my wife and I went out for a walk around Seomyeon and stopped for a hearty meal at Gang Galbitang, a galbitang (short rib soup) restaurant in Seomyeon, Busan — here's my review.

It's a great spot to head to when you're craving a deep, clean soup in the heart of Seomyeon. The tidy exterior and neat table setting made it a really satisfying choice for a date lunch too.

How do you order at Gang Galbitang? Kiosk first, counter if you prefer
Walking into Gang Galbitang, the first thing that catches your eye is the convenient kiosk ordering system. Choosing dine-in or takeout is intuitive, and for those who find kiosks tricky, there's friendly counter-order guidance too. Cash payment and kiosk point benefits are all clearly explained — you can really feel the care put into welcoming visitors.

Gang Galbitang menu and spice levels: pick 1 to 3 for the spicy bowl
The interior at Gang Galbitang is done up with a stylish stone-wall look, giving off a modern yet cozy vibe. The walls display photos and prices of the main menu items clearly. Besides the signature galbitang and spicy galbitang, there are other options too — galbi-gukbap (short rib soup with rice), spicy galbi-gukbap, and galbi noodle soup. The spicy version especially lets you dial the heat up or down with three levels — 1 (mild-spicy), 2 (spicy), 3 (very spicy) — which is a nice touch since you can pick to your taste.

Self-bar sides, free mix coffee and the photo-review hand cream at Gang Galbitang
One side of the restaurant has a neatly kept self-bar. Diced radish kimchi (kkakdugi), doenjang, peppers, garlic, dried radish strips, and chorogi pickles are all laid out tidily, so you can help yourself to as much as you need. Everything is covered with lids, which felt very hygienic. There's also a full dessert corner — a water dispenser, coffee machine, ice maker, and even nostalgic mix coffee, perfect for a clean finish after the meal. Every table has a sign for the Google or Naver Place photo-review event, where posting a receipt review gets you a small gift (a Korean-made hand cream) — worth keeping in mind if you visit. It was also impressive to see detailed multilingual guidance for foreign tourists.

Basic galbitang: clear broth with big, meaty rib bones
That day, my wife and I ordered the basic galbitang (galbi-gukbap) and the spicy galbitang, which is known for its excellent kick. The food arrives neatly set on a single-serving wooden tray with tidy side dishes.

The basic galbitang stands out for its clear, transparent yet deeply flavorful broth. It's loaded with green onions for a clean, refreshing taste, and comes with big, meaty rib bones — it's actually fun using scissors and tongs to separate the meat from the bone. Slow-braised until tender, the meat pulls apart easily, and dipping it lightly in the special soy sauce fills your mouth with savory juices.

After picking through the meat and glass noodles, pouring warm rice into the clear broth and topping it with a piece of kkakdugi makes for the perfect bowl of gukbap (soup with rice). The broth's clean flavor holds up to the last spoonful without getting tiresome, letting you enjoy it in a light, satisfying way.

Spicy galbitang: a sharp red broth that works as a hangover cure
The spicy galbitang my wife chose grabs your appetite right away with its deep red broth. It comes packed with enoki mushrooms, red peppers, and green onions alongside generous rib bones. Taking a sip of the broth, the sharp yet deeply savory flavor stood out. It wasn't an artificial kind of spicy — the heat blended nicely into a rich stock base, and I thought it would make a great hangover-soup pick.
Pulling meat off the well-braised, hefty bones and mixing it into rice with the spicy broth felt like it really cleared your head. Paired with the chorogi pickles or the crunchy kkakdugi that came alongside, you can finish the meal cleanly without any greasiness.
