In short
Gilchon Sutbul Galbi Seomyeon Main Branch is a charcoal pork rib restaurant two minutes on foot from Seomyeon Station Exit 8 in Busanjin, Busan. The 500g marinated pork rib platter, made daily from 100% bone-in pork belly and grilled over real charcoal, came with steamed egg and aged kimchi cheese fried rice, and the wide hall with separate group seating and a private room made it an easy pick for a work dinner or family outing. This Seomyeon restaurant I visited serves fresh and marinated pork ribs made from 100% bone-in pork belly, hand-cut in-house. Even just watching the meat slowly cook over charcoal was enjoyable. The exterior was bright enough to spot from a distance. The warm lighting at the entrance combined with the neat signage gave off a tidy, polished first impression despite being a pork rib restaurant in the middle of the city.

Basic side dishes and table setting

Water, cups, scissors, and tongs were neatly set out beside the table, so the tools we needed were conveniently on hand.

Once we ordered, the basic side dishes were neatly laid out on the table.
- Fresh lettuce and perilla leaves
- Shredded scallion and pickled onion that pair well with the meat
- Chili peppers and ssamjang (dipping sauce)
- Refreshing vegetable side dishes and dipping sauces
- Baek-kimchi (white kimchi) to gently open up the palate
With the green wrapping vegetables and colorful side dishes arranged in a circle, the table setting came alive with color. Each side dish was vividly colored, making for pretty photos too.
The 500g marinated pork rib platter, grilled over charcoal

The 500g marinated pork rib platter. Neatly arranged on a wide plate, the glossy marinated ribs looked appetizing even before cooking.
Using bone-in pork belly, the lean meat and fat were well balanced, and you could enjoy the chewy texture around the bone as well.

As soon as the meat hit the charcoal, the sweet marinade scent and smoky aroma spread gently, warming up the mood at the table.

Flipping the ribs often so the marinade wouldn't burn, letting them cook slowly — that process was enjoyable too.

The golden-brown grilled pork ribs kept a nice glossy sheen, and

between the sweet-salty marinade, the savory flavor of the meat came through subtly.
It's good eaten plain, or wrapped with perilla leaf or lettuce and a chili pepper for a lighter, fresher bite.

In front of the warm charcoal fire, I could slowly feel why this place is talked about as a Seomyeon restaurant worth visiting.

Fluffy steamed egg
The steamed egg puffed up softly over a hot stone bowl. With cheese melted in among the yellow egg, just looking at it gave off a soft, warm feeling.
Scooping it lightly with a spoon, it was moist and soft all the way through. Paired bite by bite with the sweet-salty marinated meat, it was a combination that gently reset the palate.

Finishing with aged kimchi cheese fried rice
The meal wrapped up with cheese fried rice mixed with finely chopped aged kimchi. Cheese melted evenly over the wide plate of fried rice, finishing bright and appetizing.

The fresh umami of the aged kimchi and the soft, stretchy cheese blended together naturally. Cutting up the leftover meat and mixing it in made it even more filling. It was a good way to gently close out the lingering taste of the charcoal-grilled pork ribs with a savory fried rice.
We paired the meal with Fanta to drink.
Final thoughts
Gilchon Sutbul Galbi Seomyeon Main Branch is easy to get to near Seomyeon Station, and with its wide hall and group spaces, it's a good option for various kinds of gatherings. Hand-cut bone-in pork belly, real charcoal grilling, clean basic side dishes, soft steamed egg, and savory cheese fried rice — the meal flowed naturally from start to finish.
It's a place I'd want to think of again on a day I want to enjoy a warm meal with the scent of charcoal in a bright yet comfortable space.
