So I visited Hanyang Dak Kalguksu Main Branch — a true kalguksu (knife-cut noodle soup) hotspot in Garak-dong that's won over local office workers and residents with chicken broth simmered over 12 hours and noodles naturally fermented for 48 hours.

Self-bar: spicy kimchi and warm naengmyeon broth
One of Hanyang Dak Kalguksu's signatures is the kimchi made fresh daily! The self-bar has spicy kimchi and a clean, non-spicy mild kimchi so you can pick to taste, plus pickled radish/danmuji. The owner really has great taste ✨

There's also warm, savory naengmyeon broth at the self-bar, free to help yourself to — great for warming up your stomach before the meal 🤍🫧
How the Hanyang Dak Kalguksu (seaweed topping) + suyuk set tasted
The Hanyang Dak Kalguksu with seaweed topping arrived with a milky white chicken broth generously piled with shredded chicken breast and seaweed flakes! Hahaha, the naturally fermented noodles, aged over 48 hours at low temperature, kept their shape without going soft and had an outstanding chewy texture.

Apparently the salinity is set at 0.85%, lower than instant ramen. It's not harsh at all — mild but deeply savory, and adding kimchi on top makes the balance absolutely perfect 💗 I'd also recommend mixing rice into the leftover broth after finishing the noodles — the broth is seriously that good 😣
The hanbang (herbal) suyuk in the set was tender and moist with no gamey smell at all, and paired perfectly with the kalguksu when eaten with the accompanying seasoned dried radish, garlic, chili, salted shrimp, and ssamjang (dipping sauce).

Was the Hanyang Chojjeong Mul Naengmyeon any good?
The Hanyang Chojjeong Mul Naengmyeon at 10,900 won is a special dish with slushy ice floating in the broth, topped generously with chicken, boiled egg, and pickled radish :) The tangy-sweet, refreshing broth cleanses the palate — a winning combo on a hot day, or paired alongside the kalguksu 〰️
Just how good is this place? Delivery orders never seem to stop. It's already a certified local favorite ☺️

If you're looking for a great restaurant in Garak-dong, be sure to stop by Hanyang Dak Kalguksu Main Branch, where you can enjoy the full course: rich broth simmered for 12 hours, gentle-on-the-stomach naturally fermented noodles, and addictive spicy kimchi!
