Namwirye shabu-shabu with half-and-half broth and kalguksu finish
In short
Dadam Shabu Shabu & Wolnamssam Wirye Branch is an all-you-can-eat beef shabu-shabu restaurant on the third floor of G&G Plaza near Namwirye Station in Seongnam, Gyeonggi. On a weekday lunch visit, the writer cooked beef chuck and beef belly in turn in a half-and-half broth, wrapped self-bar ingredients in rice paper for Vietnamese-style rolls, then finished with kalguksu (hand-cut noodles) in the broth once it had deepened. Dadam Shabu Shabu left no room for the porridge or dessert, which makes it a genuinely filling Wirye shabu-shabu meal.

The weather's been getting cooler lately, and I keep craving warm soupy food. I had lunch plans in Wirye this time, so after some thought I decided to go for shabu-shabu!
The place I visited is Dadam Shabu Shabu & Wolnamssam Wirye Branch (다담샤브샤브&월남쌈 위례점). Turns out it's a pretty famous spot near Namwirye Station, where you can get unlimited refills of not just vegetables but beef too, and enjoy everything from Vietnamese spring rolls to kalguksu, porridge, and dessert in one visit~~

True to its reputation as a Wirye favorite, there were quite a lot of people there for a meal. Lots of families, but also friends and couples, so overall it had a comfortable vibe for eating. The place itself was fairly spacious and neatly kept, which I liked. Especially with the open view toward Changgokcheon stream, it didn't feel cramped at all — I could eat at a relaxed pace~~
All-you-can-eat beef: chuck and beef belly at Dadam
The biggest perk of Dadam Shabu Shabu is definitely the all-you-can-eat setup! When you go for shabu-shabu, some places let you eat unlimited veggies but make you order extra for meat. But here, you can refill both vegetables and beef without limit.

Two types of meat were on offer: beef chuck and beef pork belly.

If you want something light, go for beef chuck; if you prefer a richer, softer bite, go for beef pork belly! I alternated between the two, and both were great depending on what you're in the mood for. The meat was sliced thin too, so cooking it briefly in the shabu-shabu broth worked out perfectly~~
What is on the self-bar at Dadam Shabu Shabu?
The self-bar had way more variety than I expected. Basic vegetables like napa cabbage, bean sprouts, and bok choy, plus several kinds of mushrooms, along with sides good for shabu-shabu like rice cakes, fish cakes, and fried tofu. Since I like loading up on vegetables when eating shabu-shabu, I really liked having a self-bar like this.

Being able to grab just a little of whatever I wanted and combine it to my taste was great. No wonder so many people come here looking for Wirye shabu-shabu~~

You can even make porridge! It's a DIY thing — grab rice, seaweed flakes, and eggs from the self-bar and mix them into the leftover broth.

There's coffee and ice cream too

For sauces, there were three options: peanut sauce, chili sauce, and spicy soy sauce.
Half-and-half broth: the spicy side is about as hot as Shin Ramyun
Cooking the beef slices in the Dadam broth
You can pick from several broth types, and after some deliberation we went with half-and-half. One side was clean and mild, the other spicy and tangy. When eating shabu-shabu, switching between two flavors instead of sticking to just one definitely keeps things from getting boring. The spicy side was about as hot as Shin Ramyun, so unless you really can't handle spice at all, it's an easy level to enjoy.

Also, as the shabu-shabu keeps simmering, the broth gets richer and richer, so if it tastes too strong, adding a little water to adjust it to your taste is a good move.

Vietnamese wrap ingredients and rice paper on the self-bar
Something else I quietly loved about Dadam Shabu Shabu is the Vietnamese spring rolls (wolnamssam). The ingredients for wolnamssam are also laid out at the self-bar in a wide variety, so you just pick whatever you want and load up your plate.

From vegetables like perilla leaves, carrots, cucumber, and cabbage, to ingredients that pair well in wolnamssam like imitation crab stick and pineapple — there was a good variety.

Rice paper was also available, so I wrapped up shabu-shabu meat and vegetables together — and eating it this way, you genuinely can't stop~~ Rather than eating shabu-shabu and wolnamssam separately, combining meat + vegetables + sauce into one wrap felt like eating a whole different dish, which I loved.

Finishing with kalguksu — no room left for porridge or dessert
After shabu-shabu, you can't skip the carbs~~ There was kalguksu and sujebi (hand-torn dough soup) at the self-bar too, so I added some into the broth at the end.

Since the broth had been simmering with meat and vegetables the whole time, it was much deeper and richer than at the start, and adding kalguksu into it made for the perfect finishing dish. I was already pretty full, but somehow this still went down... In the end I was too stuffed for the porridge and dessert, but it was seriously a full, satisfying meal!
Can you get Dadam shabu-shabu as takeout?
On top of dining in, you can apparently get shabu-shabu and wolnamssam to go too. Good option if you want to eat comfortably at home. Being able to pick exactly the ingredients you want and buy just what you need seemed like a nice touch too.
Who is Dadam Shabu Shabu Wirye Branch best for?
Overall, with such a wide range of menu items, I thought this was a place where you get a lot of food for your money. From fresh vegetables to beef, wolnamssam ingredients, kalguksu, porridge, and even dessert — nothing was missing for a full meal. Most of all, being able to refill meat as much as you want without hesitation was the best part.
If you like shabu-shabu, this is a Namwirye Station spot worth visiting at least once. It seems especially good for family meals or friend gatherings with several people, and I'd recommend it as a Wirye shabu-shabu option on days you want to eat lots of vegetables~~ Overall it was clean and filling, so it was a satisfying meal for me.
