I had some business to take care of in Ulsan, and while figuring out what to eat for lunch, milmyeon (cold buckwheat noodles) just called out to me. It was starting to warm up, so I was craving something cold and refreshing. A quick search turned up a name that kept coming up whenever Ulsan milmyeon came up — Samsam Milmyeon. The reviews were unanimously glowing, so there was no way I could skip it. My wife and I punched it into the navigation and set off, already feeling the anticipation build. It seemed like a perfect lunch stop for a trip or business trip to Ulsan, so I hurried us along.

Luckily, there's a designated parking lot nearby for customers who drive, like us. After parking, you get a stamp on your parking ticket at the restaurant — such a convenient system. Not many milmyeon places bother with parking like this, so it scored points with us right from the start.

We walked into Samsam Milmyeon Main Branch around 3pm on a weekday, and there were still quite a few locals eating. The moment we stepped through the entrance, we could feel something distinct — that particular air of an old, time-worn restaurant that's earned its reputation. The sign isn't flashy, it's modest, but somehow that gives it even more of a genuine, trustworthy feel. Usually places empty out after the typical mealtime, so having customers even at this hour is proof of a steady base of regulars.
The tables weren't spaced generously, but enough that we didn't have to mind the next table over. The lighting was soft and comfortable, and the indoor temperature felt just right — refreshingly cool for us after working up a sweat outside. Overall it was a space that felt less about flash and more about the comfort typical of a genuine local favorite.

The bibim-milmyeon at Samsam Milmyeon Main Branch came out with red sauce evenly tossed through the noodles — the color alone was mouthwatering. The moment I mixed it with my chopsticks and took a bite, the harmony of the sweet-and-spicy sauce spread through my mouth.

The more I chewed, the more a subtle sweetness followed the spiciness — an addictive flavor that kept my chopsticks going back for more. The spice level wasn't overwhelming, just pleasantly spicy, so even people who aren't great with spicy food shouldn't have too much trouble. Even after finishing, a gentle spicy lingering flavor stayed with me, the kind that keeps crossing your mind.

The moment I saw the dumplings, I could immediately tell the skin was different from typical dumpling wrappers. The color had a slight translucence with a chewy sheen, giving it a look reminiscent of gamjatteok (potato rice cake). Biting in, the skin chewed with a springy resistance, and a bit of juice seeped out from inside.
The filling was generously packed yet soft, making for a fun contrast with the chewy skin. There was a savory aroma with a hint of garlic that kept pulling my chopsticks back for another. The more I chewed, the more the springy resilience of the skin came through, showing off a charm different from ordinary dumplings. They came out warm, so alternating with the cold milmyeon let us enjoy a nice contrast in temperature too.

Considering the portion size and flavor for the price, Samsam Milmyeon Main Branch really is excellent value. My wife kept saying how good it was throughout the meal, and she seemed especially moved by how generous the cucumber topping was. If I had to name a drawback, on days with a wait, finding a seat might be a bit tricky.
Next time, I'd like to try some of their other naengmyeon-style menu items. It's a fine choice for lunch on an Ulsan travel itinerary, and a great spot to stop by if you have time near the terminal. If I ever have reason to go to Ulsan again, this is the place I'll head to for milmyeon, no question.
