The basic table setting comes with seasoned raw crab! This seasoned raw crab is a total rice-thief too, seriously so addictive.

The dip lineup is wasabi, ssamjang, and matcha salt!

Now let's really taste the Nanchuk Matdon! Unlike regular black pork, it has 4 times the fat content — oh, that fine marbling ㅠㅠㅠ it's going to be packed with savory flavor.

How does the staff grilling service work at Pork80?

Luckily it wasn't a crowded time slot, so a staff member personally did the grilling service for me!! They grilled several pieces of meat plus mushrooms and scallions! The combination of these grilled scallions with meljeot (fermented anchovy sauce) was a perfect match.

I don't usually like meljeot, but this meljeot wasn't fishy at all and it doubled the flavor of the black pork!!!!!

Thank you to the staff member who grilled it so deliciously ㅠㅠ this waiting time seriously drags on........ I just want to eat it already.

First bite of Nanchuk Matdon: salt first, then wasabi

Finally, the first taste of Nanchuk Matdon black pork!! For the first bite, definitely dip it in salt. Eating it in thick slices rather than cutting it small is the way to fully enjoy Pork80's black pork!!

Wow, the very first bite — the juiciness was insane!!!!!!!! The abundant juices and the flavor of the black pork were seriously amazing. I could taste the meat filling my whole mouth!

For the second bite, I tried it with wasabi! Eating it with wasabi, the wasabi and the black pork's flavor matched incredibly well.

And when grilled with whole mushrooms, the sweetness of the whole mushrooms and scallions matched really well. Eating the Nanchuk Matdon in a whole piece feels like eating the black pork all at once. It might feel a bit much at first, but taking this kind of big bite is truly the way to enjoy Nanchuk Matdon.

I also tried it with pickled chili and with a bowl of rice, but I found eating the pork with wasabi the most delicious! The combination of wasabi and pork is just~~~~ such an insane pairing~~~~~~

The surprise combination: meljeot, grilled scallions and black pork

And unexpectedly, the best combination was wrapping meljeot and grilled scallion together with the meat in one bite!! The meat's juices and the meljeot matched better than expected, so I kept eating it this way over and over.
