Cheonan bakery café Monday open run, 3 baked treats: Brewers Coffee
In short
Brewers Coffee Cheonan Sinbu Branch is a bakery café in Sinbu-dong, Cheonan that bakes financiers, madeleines, flan and canelé fresh each day. After a weekend afternoon visit ended with everything sold out, the writer came back for a 12:30 Monday open run and, sitting alone in front of a full display case, ate Earl Grey canelé, pistachio canelé, pecan espresso madeleine and Dubai financier with an iced americano. Because the lineup changes a little every visit, Brewers Coffee is a Sinbu-dong dessert café worth returning to regularly.

I visited Brewers Coffee, probably the busiest, most popular baked-goods café in Sinbu-dong, Cheonan! I went on a weekend afternoon recently and there was literally nothing left, so this time I went at what basically counted as an opening run!
Where is Brewers Coffee Cheonan Sinbu Branch, and what are the hours?

A Monday 12:30 open run — and already a wait
I figured if I went for the opening run no one would be there, so I showed up around 12:30, taking my time — and I was genuinely surprised to find people already seated and a line for the baked goods. The photo is from when I finished eating and left around 2pm... it wasn't just full, there was even a line waiting outside. On a Monday! That's the level of this Cheonan baked-goods spot, haha 👍

When you walk in, a staff member asks if it's to-go or to stay. If you're staying, you absolutely have to grab a seat first. So it's line up while you're still deciding what to eat, haha.
Baked goods and drinks menu at Brewers Coffee

This is such a popular dessert spot in Sinbu-dong that going at basically opening-run level meant I finally got to see the display case fully stocked for once.

There are four baked goods categories — financier, madeleine, flan, canelé — and over 20 varieties made fresh daily, from the originals to seasonal specials, so there's plenty of variety.

This is the menu at Brewers Coffee, a Sinbu-dong café. Drinks and coffee make up most of it — I haven't tried the drinks here yet, but the coffee is good :)
Indoor seats and the outdoor terrace

The interior of Brewers Coffee is vintage yet tastefully styled — a cozy Sinbu-dong café that doesn't get old even on repeat visits.

With wood tables and soft indirect lighting adjusted by natural daylight, it's a calm, comfortable space.

There's a mix of group tables, 2-seaters and 4-seaters, but once it fills up — which happens fast — the interior gets crowded and noisy...
The orientation is a little unfortunate, but there's also a bar seat with character.
The outdoor seating at this Sinbu-dong café has a European feel, and it would be perfect to sit outside now while it's cool like this.
What one person ordered: 4 baked treats and an iced americano

I came alone, but since there might not be another chance like this, I ordered an iced americano and a whole range of the baked goods I wanted.

This is already my third or fourth visit to this Sinbu-dong café, and the baked goods lineup shifts a little every time, so it's worth coming back regularly, haha.

Madeleine, canelé, financier — since it's just me, this is a spread reflecting purely my own taste. Next time I'll try the flan too.

Earl Grey canelé
Good handmade canelé is rare among Cheonan's baked-goods spots, so I always pick it when I come to Brewers Coffee. Earl Grey itself is a love-it-or-hate-it flavor, but personally I love it — the chewy, richly caramelized canelé is coated with Earl Grey fragrance, making it fragrant and refined.

Pistachio canelé
I'd been curious about this one for a while and finally got it... it looks like it was rolled through a pistachio field, coated thick, and gives a crunchy bite. Every time it cracks, that nutty savoriness spreads through your mouth. I love nuts, and this one especially had great flavor depth.

Pecan espresso madeleine
The madeleine itself was fluffy and moist, coated on the outside with espresso for a subtle coffee aroma, and the walnut pieces studded throughout added a nutty accent.

Dubai financier
Among Brewers Coffee's signature financiers, the Dubai one was born during the peak of the Dubai chocolate craze and it's still popular. The chewy financier is packed with pistachio kataifi, giving it a rich flavor and that familiar crunchy bite, plus a chocolate coating on top — honestly a textbook sweet financier that beats the original Dubai chocolate treat.

To keep a clear conscience I also had an iced americano — clean with no burnt taste, and nicely nutty too :)
Is Brewers Coffee Cheonan Sinbu Branch worth an open run?

Brewers Coffee is a special, distinctive Cheonan baked-goods spot rarely matched even by other dessert cafés! With its vintage, calm atmosphere, it's great for conversation and also a good Sinbu-dong café to relax in with coffee 😊
