When you think of Daejeon, the soul food that comes to mind first has to be kalguksu (knife-cut noodle soup). Daejeon is known as the city of kalguksu, and among its many famous spots, Sindo Kalguksu stands out with its remarkable history. I'd heard the name so many times but this was actually my first visit! The owner I went with swore it was really good 👍🏼

What kind of restaurant is Sindo Kalguksu Jungchon branch?

Once I actually tasted it, I understood immediately why people keep coming back — the chewy, moist noodles were the star of a truly rich broth. That day we ordered the signature kalguksu along with another Daejeon specialty, tofu duruchigi. Tofu's protein, after all... hahaha

How were the kalguksu noodles?

Even in the middle of the rush, the food came out fast. The moment the kalguksu landed on the table, a rich, savory broth aroma wafted up. I picked up a big bunch of noodles with my chopsticks for the first bite, and the texture was truly unmatched. Phew... so this is why it's called a kalguksu institution.

"Chewy" is exactly the right word for these noodles. The outside was moist while the inside stayed springy, making every bite fun to chew — hahaha, guilty as charged, I'm the type who enjoys eating for the texture. The deeply infused broth had soaked into the noodles so thoroughly that even down to the last bite, they stayed springy without going soft — a real specialty.

How spicy is the tofu duruchigi sauce?
