A light poke meal near Chungju Terminal

I was craving something easy on the stomach while looking for salads in Chungju, so let me introduce a place I found. It was Salad Ring, Chungju Terminal Branch in Bongbang-dong—I’d been eating out for several days straight, and it was all starting to feel a bit heavy, so I thought, today I really need something light~!!

Being near Chungju Terminal, it was in a spot that people passing by could easily notice. The large glass windows let you see clearly inside from outdoors, and the exterior really was the kind that catches your eye as you walk past!

From solo seats to tables for groups

When I opened the door and walked in, the place had a bright, casual feel. There was a mix of seats that were nice for dining alone and tables for several people, making it an easy layout to use.

Seafood poke and a smoked duck rice wrap

We ordered three things: the Seafood All-in-One Bibim Poke, the Barbecue Deep Smoked Duck Rice Wrap, and an Americano. We were curious about both the poke and the wrap, so we got one of each to share.

Seafood All-in-One Bibim Poke

The Seafood All-in-One Bibim Poke came topped with grilled shrimp, scallops, and fresh salmon all in one bowl, so it looked generous from the start. It also had vegetables and superfoods, making it colorful and pretty—everything looked so fresh!!

I mixed it up and took a bite, and each type of seafood kept its own texture while blending well with the vegetables, which made it fun to chew. The salmon was soft, while the shrimp and scallops had a nice springy bite, so it was lovely having all those textures in one bowl. The dressing was fresh rather than overly heavy and felt like it did not overpower the ingredients themselves. And honestly, watching all the colorful vegetables mix together whenever I stirred it with my spoon was quietly satisfying too.

A smoked duck wrap that is easy to eat one-handed

I also tried the Barbecue Deep Smoked Duck Rice Wrap, and the duck’s gentle smoky aroma went really well with the sweet barbecue sauce. Brown rice and fresh vegetables were rolled up inside, making it easy to eat in one bite, and that distinctive savory smokiness came through with every chew. It was not greasy at all—if anything, it leaned clean and mild, so it was easy to enjoy without feeling weighed down. When I cut the wrap in half, the layers of duck, brown rice, and vegetables looked pretty too. It was a convenient size to hold in one hand, so it seems like it would be easy even when you need to grab a meal in a hurry.

An Americano after the meal

I had an Americano with it too, and the beans had a nice balance, with both body and a nutty note. Having it after the poke and wrap made my mouth feel nicely refreshed, and it was not overly bitter, so it went down smoothly. It worked equally well alongside the meal or for lingering over after finishing.
