With the cooler autumn weather, I've been taking a lot of trips out to Paju lately, and along the way I found a great Pyeongyang naengmyeon spot I want to introduce :)

Just a five-minute drive from Lotte Outlet Paju and Paju Book City, Bubyeokjeong Pyeongyang Mandu is a great Paju spot for a family outing or a date course.

It's a Pyeongyang cuisine specialist known for clean, understated flavors — perfect for a meal out with parents in Paju. Here's my review of Bubyeokjeong Pyeongyang Mandu 😎

Bubyeokjeong Pyeongyang Mandu in Paju: a 15-minute wait even at weekday lunch

Bubyeokjeong Pyeongyang Mandu, said to draw over 100,000 visitors a year, is a place with a wait no matter the day of the week.

We visited outside the usual weekday lunch rush, but it was already full, and luckily we got a table after about a 15-minute wait.

Inside Bubyeokjeong: dining room, self-serve bar and the dumpling-folding room

With warm sunlight filtering in through the bright floor-to-ceiling windows throughout the meal, Bubyeokjeong Pyeongyang Mandu in Paju has an upscale yet comfortable atmosphere.

That upscale feel makes it a great choice for a visit with parents, and just as good for a relaxed meal with family and kids.

The spacious, clean dining room seats up to 106 people and can also be booked for group events — perfect for family gatherings, group meetups, or company dinners 💪

In the center of the restaurant is a neatly organized self-serve bar. It's stocked with everything from baby tableware for little ones to mandu jeongol broth, baek-kimchi (white kimchi), and yuja (citron) pickled radish, so you can help yourself with ease.

Next to the self-serve corner is a space where you can watch Bubyeokjeong's mandu being carefully handmade in real time — Pyeongyang-style dumplings said to have originated from a grandmother's recipe made for her grandfather, who left Pyeongyang because of the war.

Bubyeokjeong Pyeongyang Mandu is a Paju spot serving up a range of authentic North Korean-style dishes, staying true to the original flavors — Pyeongyang-style makguksu, mandu, and mandu jeongol.

There are also side dishes like nokdujeon (mung bean pancake) and suyuk (boiled meat platter), plus a kids' mandu soup for the little ones.

As soon as we ordered, the three clean side dishes arrived: baek-kimchi, yuja pickled radish, and well-fermented napa cabbage kimchi.

The yuja pickled radish was something I'd never had before — its tangy, sweet-and-salty balance paired beautifully with both the mild Pyeongyang naengmyeon and the mandu jeongol.

A nice bonus at this Lotte Outlet Paju favorite is that the mandu jeongol comes in mild or spicy.

Since it was rare for us to eat without the kids around, we went with spicy, of course — the neatly arranged lunch spread with the spicy mandu jeongol broth was quickly followed by the Pyeongyang water makguksu and golden-fried nokdu bindaetteok. Truly flawless food 💪

What stood out in the Paju Book City favorite's mandu jeongol was the fresh vegetables — bean sprouts, cabbage, perilla leaves — along with premium mushrooms like wood ear and shiitake.

The mandu, freshly made that very day, are simple-looking but clearly made with care, and the noodles are generously included too, making it excellent value for the price.

Nokdu bindaetteok at 10,000 won: the most popular side order

Bubyeokjeong's most popular side dish, the nokdu bindaetteok, looks so golden and crisp it makes your mouth water just looking at it 👏

They soak 100% mung beans for 4-5 hours every day and grind them fresh in-house, so you get the full, natural nutty flavor of the mung bean.

With cheongyang chili added, it naturally cuts through the pancake's richness — the combination of clean mung bean flavor and spice made it impossible to put my chopsticks down.

If you visit this Paju Pyeongyang naengmyeon favorite, you have to order the Pyeongyang water makguksu, newly launched this past May.

It's a no-frills, back-to-basics dish made with top-grade Korean beef broth and 100% buckwheat noodles.

The clear, clean beef broth combined with the nutty, earthy flavor of buckwheat delivers a depth of flavor that won't disappoint anyone who loves Pyeongyang naengmyeon.

How to eat the mandu jeongol: save the dumplings for last

Once the broth comes to a boil, add all the prepared vegetables and mushrooms and wait until the vegetables wilt.

Since the Pyeongyang mandu are already cooked enough to eat right away, apparently you're meant to add them in last, once the broth is boiling 🥟

The vegetables and mushrooms were so fresh that even after dropping them straight into the boiling broth, it took quite a while for them to cook through!

Once the vegetables had softened a bit, it was finally time to add the Pyeongyang mandu! Bubyeokjeong's mandu aren't flashy, but the natural flavor of the ingredients really comes through in these simple, well-made dumplings.

They're also bigger than an adult's palm, so just two of them are enough to leave you satisfyingly full.

After enjoying the vegetables and mandu in the jeongol, no matter how full you are, you know a mandu jeongol has to end with kalguksu (hand-cut noodles), right?

Each table has an hourglass — boil the noodles for about the 5 minutes it takes to run out, and the chewy noodles soak up all the broth's flavor for an even better bite.

Finishing off the clean but rich, spicy broth with the kalguksu was the perfect ending 👏

By the entrance, there's a thoughtful little corner of nostalgic snacks that anyone can enjoy freely.

From refreshing, nutty misutgaru (roasted grain drink) to coffee and old-fashioned candies, it's a nice light treat before or after the meal.
