Ever since I started PT sessions (I'm on a break right now, haha), I've felt a bit of a duty to eat enough protein.
But you know what — this turned into a great excuse for eating out. 😂 Since I dine out two or three times a week for dinner these days, I find myself gravitating toward raw fish or meat, telling myself "gotta fill up on protein~" lol.
Eating the same meat every time gets boring, so this time I switched it up! This week's protein assignment: prime rib. 🥩
Where to eat prime rib on Nahyeseok-gil in Ingye-dong
Jipbul Taebaek Suwon Ingye Branch is a straw-fire BBQ restaurant on Nahyeseok-gil in Ingye-dong, known mainly for its prime rib. We booked a 6pm weekday reservation to try the raw prime rib.
The first place I ever tried prime rib was Mongtan, back when it was super hot. I remember waiting in line on a weekday lunch thanks to a friend who worked nearby back then, haha. I hadn't really sought out prime rib on purpose since.
But when I saw that Jipbul Taebaek in Ingye-dong served prime rib, I thought "I have to check this place out~" and finally made it over one evening, combining it with a walk in the Ingye-dong park. 😊
Since the raw prime rib is sold in limited quantity, we booked a slightly early dinner time. We reserved for 6pm, and even on a weekday at that hour, there were quite a few customers already.

Inside Jipbul Taebaek: a clean, comfortable Suwon BBQ room
Jipbul Taebaek is close to Suwon City Hall Station and tucked inside Ingye-dong's restaurant district, so it was easy to find.

With plenty of restaurants, bars, and cafés nearby, it's a great spot to keep the night going after dinner — which made me think it'd work well as an Ingye-dong date course too.
Walking in, the place felt clean and comfortable overall, probably because it hasn't been open too long.

The tables weren't crammed too close together either, which was nice — no worrying about the next table over. There's a self-serve bar on one side, and you can watch the meat being pre-seared over rice straw.

Getting to watch this pre-searing process up close made the wait more fun. 🔥
Raw prime rib for two and beer: banchan and sauces included
In total we ordered: raw prime rib (2 servings) + 1 bottle of Terra.

After a short wait, the banchan (side dishes) arrived — and there was a lot of them.

Lettuce salad, japchae (glass noodle stir-fry), potato salad, green onion kimchi, stir-fried napa greens, pickles, and spicy radish salad! So many side dishes to keep things interesting, no chance of getting tired of just meat.

And the sauces for dipping the meat were just as varied. Black sesame salt, ssamjang, mustard, aged soy sauce, angelica pesto, and neungi mushroom pesto! The flavor changes a lot depending on which sauce you dip in, so it was fun trying each one. 😆 You grab your own ssam vegetables from the self-serve bar.

The kimchi was personally a favorite — apparently it's made with cabbage sourced from the Taebaek region. Meat really does need kimchi! I especially loved the combo of green onion kimchi with prime rib. 👍
Pre-seared over rice straw and grilled entirely by the staff
Jipbul Taebaek's prime rib is first pre-seared over rice straw, then grilled again over charcoal at the table. And finally, the prime rib arrived!

The thickness alone is impressive, right? Haha. Best of all, the staff grilled it from start to finish! Trained staff watched the meat and cooked it to the perfect doneness.
Honestly, meat this thick and big would've been tough for us to grill ourselves. 😂


With staff grilling the meat and even separating it from the bone into bite-sized pieces, all we had to do was eat comfortably. I could see why this place attracts a lot of groups for work dinners — the restaurant filled up with clearly celebratory tables as the evening went on.
Why is raw prime rib pricier than marinated prime rib?
Looking at the menu at Jipbul Taebaek, one thing caught my curiosity: the raw prime rib costs more than the marinated version.

So I asked the staff, "Why is the raw prime rib more expensive?" They explained that prime rib comes from the flavorful 6th-8th rib section of beef short rib, and within that, only the best-sized, best-shaped cuts are used for raw prime rib — the rest go into the marinated version.

Since they receive whole rib racks and butcher them in-house, the top-grade cuts naturally come in limited quantity. Somehow, knowing this made it taste even better, lol. Funny how the mind works. 😆
How Jipbul Taebaek's prime rib differs from Mongtan's
When I think of prime rib, Mongtan still comes to mind first. But trying it here, I noticed the style is quite different from Jipbul Taebaek.
My impression was that Mongtan leans harder into the straw-smoke flavor, giving it a strong barbecue character alongside the meat itself, while Jipbul Taebaek's prime rib has a more subtle straw aroma, letting the texture and flavor of the meat itself take center stage.
Since the two places have different styles, it's less about which is "better" and more about personal preference. 😊
Best sauce of the night: aged soy sauce
From here on, we started mixing and matching. Haha. The staff mentioned that the angelica pesto and neungi mushroom pesto are a bit polarizing, but my husband and I both loved them!

The slight bitterness actually cuts through the richness of the meat and brings out more flavor, if that makes sense? It paired really well. But my personal favorite was something else entirely!
The aged soy sauce! Sweet and savory, exactly my taste since I love sweet flavors. Dipping the meat in it gave the perfect sweet-and-salty combo. 😍


Everyone's taste is different, so it's worth trying each sauce one by one to find your own favorite.
We planned to skip the rice at Jipbul Taebaek, but...
That was the plan at first. "We're here for protein today, so let's skip the rice and stew!" But after finishing most of the meat, something felt missing. 😂
As we got toward the end of the prime rib, the staff separated more meat still clinging to the bone, and it turned out chewy and tender — several more bites of it. So in the end... we ordered the tteok wraps (grilled rice cake wraps). Lol.
Prime rib + tteok wrap + soybean powder ❤️
Ordering the tteok wraps comes with soybean powder on the side, and I genuinely love dipping meat in soybean powder.


Lightly grill the tteok wrap, top it with meat, dip it deep in the soybean powder — oh, this is good too. 😋 I wished we'd ordered it sooner. In the end, we snuck in some carbs after all... lol.

We also had a bottle of beer, so... yeah. Turns out "we're here for protein" was just an excuse. 🤣
Even on a weeknight, a queue forms after 7pm
Jipbul Taebaek Suwon Ingye Branch gets busy around 7pm even on weeknights. When we walked in at 6pm it was still relatively relaxed, but by 7pm a wait had formed.

So we hurried to finish up and leave. If you want to eat comfortably without rushing, it's worth going a bit earlier or making a reservation — Naver Reservations is available.
The birthday yukhoe cake event at Jipbul Taebaek 🎂
While eating, I also noticed a fun event: for tables celebrating a birthday, they serve yukhoe (beef tartare) with candles stuck in it, styled like a cake. We happened to spot a table doing exactly this, and the yukhoe cake visual was pretty entertaining, haha.

Since this event runs on your actual birthday, if you're planning a birthday dinner out, it might be worth checking the exact conditions before you visit.
One last stop for gelato near Nahyeseok-gil 😂
Stuffed and heading out, we spotted a gelato shop right across the street.

For some reason, my husband and I always end dinner out with ice cream. So there was no walking past it. Lol. I couldn't resist my husband's longing gaze, and we ended up in the gelato shop — where we were impressed all over again. 😂

A solid pick for a team dinner or date in Ingye-dong
Overall, what I liked most about Jipbul Taebaek Ingye Branch was that staff handle all the grilling. No need to grill the thick prime rib yourself — they cook it to the perfect timing and even trim it for easy eating.
