After finishing up my schedule, the weather was so nice and I was craving gopchang (grilled beef intestine) so badly that a friend and I headed to Jinseong Hanwoo Gopchang Garak Flagship, a place we'd heard was good nearby.

Jinseong Hanwoo Gopchang Garak Flagship is on the 1st floor of a building at 27 Songpadae-ro 28-gil. It was easy to spot right away since it's on the ground floor, and there were chairs set up outside so you can sit while you wait — even if there's a line, it seemed like it wouldn't be a hassle.

The interior was neatly kept and there were plenty of tables, making it a comfortable spot to eat with friends or family. The tables also had decent spacing between them, so it was easy to chat while enjoying a good meal.

Jinseong Hanwoo Gopchang Garak Flagship uses hanwoo (Korean native beef) gopchang slaughtered the same day, served with aged garlic sauce and four kinds of house-made kimchi, including green onion kimchi and kkakdugi. It's a grilled beef intestine specialist that clearly puts thought into the kimchi and sauces served alongside, not just the gopchang itself — which made me even more excited.

Here's the menu. Prices were relatively affordable compared to other gopchang restaurants. There weren't too many items, which meant less time agonizing over what to order.

We ordered three servings of hanwoo gopchang and kkakdugi fried rice. Steamed egg also came out as a complimentary side.

Once we ordered, a variety of basic side dishes came out, and I especially loved that there were several kinds of kimchi. You could tell they really take pride in their kimchi — they even sell it separately.

They gave us a timer so we could eat once the alarm went off, which made the waiting kind of fun. While the gopchang grilled, kimchi, vegetables, potatoes, and rice cakes cooked alongside it — and eating the golden, well-cooked potatoes and rice cakes together with the gopchang was a surprisingly nice treat too.

Finally I got to try the well-grilled gopchang, and the fat inside was no joke... one bite in and it was packed with fat, so the rich, savory flavor really came through. That distinct rich, deep gopchang taste came through clearly, and the more I chewed, the more the flavor of the fat built up — as someone who loves gopchang, this was exactly my type.

And the garlic sauce that came with it was genuinely delicious too. Dipping the gopchang right into the sauce added a salty, savory depth on top of the rich gopchang flavor — personally, I found this combination incredibly good. Dipping the gopchang in garlic sauce and eating it with kimchi on the side made for a taste I kept reaching for.

Definitely order the kkakdugi fried rice too

This next dish is the kkakdugi fried rice, and it genuinely paired so well with the gopchang and tasted great. The kkakdugi fried rice had a tangy, spicy flavor that went perfectly with the rich gopchang. It wasn't just plain kkakdugi mixed in either — there were plenty of other ingredients in it, which made it even better.

Eating the rich gopchang and then switching to the tangy-spicy fried rice felt like a palate refresh each time, so I kept going back and forth between the two. That's how I managed to enjoy it without getting tired of it, all the way to the last bite.

Personally, out of everything I ate that day, the kkakdugi fried rice was just as memorable as the gopchang itself, and I was glad we ordered both together. If you ever go to Jinseong Hanwoo Gopchang, I definitely recommend ordering the kkakdugi fried rice to have alongside the gopchang.
