Two ciabattas and chocolate baguette at Goyang bakery Boulangerie Tan

In short

Boulangerie Tan, Hyundai Department Store KINTEX is a naturally leavened bakery on basement level 1 of Hyundai Department Store KINTEX in Ilsanseo-gu, Goyang. A self-described ciabatta lover took home five breads here — plain ciabatta, olive-cheese ciabatta, the signature chocolate baguette, and mentaiko potato and gourmet butter salt breads — and the chocolate baguette, not too sweet with a clear nutty flavor, was the parents' favorite. Boulangerie Tan is a bakery where good ingredients and slow, low-temperature fermentation show in every loaf.

Three signature sandwiches on display

Signature sandwiches and the chocolate baguette

The first signature at Boulangerie Tan is the carrot rapée chicken sandwich, blending the natural sweetness of carrot with the tang of white balsamic and creamy chicken topping. There's also the jambon fromage, a jambon-beurre style sandwich loaded with arugula, emmental cheese and wholegrain mayo sauce for a fuller flavor. And the sun-dried tomato sandwich brings umami with richly concentrated pickled tomato, sliced mozzarella and salami. Various salt breads and ciabatta baguettes are also on hand.

Chocolate baguette on the display shelf

The second signature is the chocolate baguette, made with sweet-bitter cacao dough packed with savory coconut slices and roasted walnuts. Choco baguettes are pretty hot right now, so I brought one home to try — and I was completely satisfied.

Two ciabattas, chocolate baguette, and two salt breads taken to go

The 5 breads a ciabatta lover picked

Two ciabattas, a chocolate baguette, and two salt breads, all picked by a self-proclaimed ciabatta killer.

Plain ciabatta staying true to the basics

Plain ciabatta

A no-frills, chewy plain ciabatta made with organic flour and French flour, staying true to the basics. Great on its own, or split in half and stuffed with arugula, ham and cheese to make a delicious sandwich.

Olive cheese ciabatta

Olive-cheese ciabatta

A savory, salty ciabatta made with three types of cheese plus green and black olives.

Cross-section of ciabatta studded with cheese and olives

The three cheeses and olives are packed generously throughout the ciabatta, so their presence really comes through — I liked that.

Chocolate baguette sliced for easy eating

Chocolate baguette, the loaf my parents liked most

The signature chocolate baguette, sliced nicely by a friendly staff member. It wasn't as overly sweet as expected and had a strong nutty flavor, which made it my parents' favorite.

Cross-section of chocolate baguette with coconut slices and walnuts

The sweet-bitter cacao dough is generously loaded with savory coconut slices and roasted walnuts, giving it a great texture, and it paired perfectly with plain white milk.

Mentaiko potato salt bread filled with mashed potato

Mentaiko potato salt bread

A salty, savory salt bread generously filled with house-made mentaiko (pollock roe) mashed potato. You could really feel the fluffy potato texture, making it a filling, delicious salt bread.

Crispy-outside, soft-inside gourmet butter salt bread

Gourmet butter salt bread

A crispy-outside, soft-inside salt bread with an appealing salty flavor. Simple at its core, but made special with good butter and good flour — a standout salt bread from Boulangerie Tan.
