Gimhae clam kalguksu with covered self-serve bar: Seosan Dongjuk
In short
Seosan Dongjuk Kalguksu is a clam kalguksu (noodle soup) restaurant on Deokjeong-ro 201beon-gil in Gimhae, Gyeongnam. Over two bowls of dongjuk kalguksu and a ₩15,000 onaksae seafood pancake, the just-right spicy house kimchi, a fully lidded self-serve bar, and fresh clams that popped open at a touch of chopsticks stood out. The broth's finish felt a touch mild, but a handful of cheongyang chili fixed that, and the whole meal was good enough to make this the go-to kalguksu spot from now on.

I was in Jangyu visiting Baby House when I suddenly craved kalguksu (knife-cut noodle soup) and ended up here. This is a sponsored post, but I'm honestly booking myself in as a regular haha. The spicy kimchi, the noodle soup, and the seafood pancake were all so satisfying that I'm calling it — this is a certified kalguksu spot in Gimhae. Let me walk through exactly why I'm recommending it this hard!
Seosan Dongjuk Kalguksu: location, hours, and parking

- 📍 Address: 19 Deokjeong-ro 201beon-gil, Gimhae-si, Gyeongnam, South Korea, 1st floor
- ⏰ Hours: Daily 10:00–21:00 (last order 20:00)
- 🚗 Parking: Private lot on site, up to 16 cars

A sign I spotted on the walk from the parking lot to the restaurant: made same-day, discarded same-day. Reading that instantly boosted my trust — the clams had to be fresh.
Just three menu items, plus makgeolli by the glass

Seosan Dongjuk Kalguksu's menu has exactly three items!
- Dongjuk kalguksu (clam knife-cut noodle soup)
- Onaksae seafood pancake
- Dongjuk clam soup
We ordered two kalguksu and one onaksae seafood pancake, and while browsing the menu I noticed — wow, they even sell makgeolli (rice wine) by the glass? (I'm postpartum right now, so I've already decided: the day I'm cleared to drink, I'm coming back for the glass-of-makgeolli-plus-kalguksu-plus-pancake combo, no question.)

So there I was, licking my lips over makgeolli I can't even drink right now, looking out the window — and the view was so nice I thought this would be a great spot to bring my parents too!
The house kimchi is just the right amount of spicy

The basic banchan (side dishes) are kimchi and kkakdugi (cubed radish kimchi), and since we ordered the pancake, they also gave us three dipping sauces. Wow, this kimchi is genuinely amazing... At most kalguksu places with spicy kimchi, honestly, it's usually just spicy without being particularly delicious. The only place I'd previously thought had decent kimchi was a famous kalguksu spot near a park in Busan — but even there, the kimchi was so spicy it was sometimes hard to get through. Here, though, it's spicy but truly delicious, spicy in exactly the right amount.
Every container on the self-serve bar has a lid

And another thing I really loved. Can you see how every container on the self-serve bar has a lid? I love kalguksu and have eaten at a lot of places, but I don't think I've seen anywhere manage their self-serve bar this hygienically. When things are left open, dust gets in — that's unavoidable, I know — but at Seosan Dongjuk Kalguksu, every side dish and sauce is protected, so I refilled my banchan with zero hesitation!
The ₩15,000 onaksae seafood pancake — this much seafood

And here's what came out~ First, take a look at the seafood. Then look at the edges too...??? For ₩15,000, this pancake's quality is insane. It looks exactly like the photo on the menu.

As you can see in the photo, it's fried thin and crispy, but packed with seafood — I felt like every bite had 2-3 pieces of seafood in it. To give you an idea: at first I wondered why there was chojang (vinegar-chili sauce) on the side, but as I kept eating, there was so much seafood that I actually started dipping it separately. Yeah... that's how much seafood is in there haha.
Dongjuk kalguksu: clams that pop right open at a touch of chopsticks

And now our main dish, the dongjuk kalguksu~~~~ You could tell at a glance the clams were all fresh. Usually with dishes like this, you see a fair number of clams that never opened — but here, even the ones that looked closed popped right open the moment I touched them with my chopsticks, and eating them, they were so chewy and nutty. The portion was generous too — I ate them with the noodles, with the broth, and dipped in chojang, and it still felt like the pile wasn't shrinking.

The broth had a slight starchiness from the noodles that made it a touch less clean-tasting, but adding the cheongyang chili from the self-serve bar brought that clean flavor right back. With these springy noodles, the clams, and the spicy kimchi, this was genuinely the best kalguksu I've had recently — hands down.
Final thoughts — hygiene sealed the deal

Taste aside, one of the reasons I love this place is the hygiene! I had norovirus once before, and ever since, even when I crave clams, I only eat a little and toss anything that seems off. But here, I could see staff continuously wiping things down throughout the meal, and combined with that same-day-made, same-day-discarded sign I saw at the start, I felt confident enough to just dig in.
The broth being a little less clean-tasting was a small letdown, but that spicy kimchi is genuinely... just go try it yourself haha. I know the taste now, and even writing this post I keep thinking about it, which is honestly a bit rough haha. Bottom line, this place is that good — from now on, whenever I want kalguksu, I'm heading to Seosan Dongjuk Kalguksu~ Consider me a regular already.
This is a sponsored post, but I'm honestly booking myself in as a regular haha.
