Giheung kalguksu restaurant with stretchy cheese noodles: Jangwongap

In short

Jangwongap Kalguksu Yongin Giheung Branch is a kalguksu (hand-cut noodle) course restaurant on Gomae-ro in Giheung-gu, Yongin, Gyeonggi. Visiting as a party of three, the writer followed the staff's advice and ordered the chadol minari-ssam shabu kalguksu for two (15,500 won) plus a whole-shrimp seafood pancake (13,500 won), a course that runs from wagyu brisket wraps to house-made noodles and ends with perilla oil kkakdugi fried rice. The house-made noodles stretch like mozzarella and change texture between 6 and 10 minutes in the broth, and Jangwongap earns a full 5 out of 5.

If you've seen my posts you probably know I'm seriously obsessed with home decor. So I go to IKEA all the time, and while hunting for good food nearby — and I love kalguksu (hand-cut noodle soup) — someone told me about a place that's genuinely amazing. That's Jangwongap Kalguksu Yongin Giheung Branch!! How did they know I'm noodle-obsessed... the second I heard, I went 🤤

If you're looking for a kalguksu spot in Giheung-gu, Yongin, you've probably heard the name Jangwongap Kalguksu 👂🏻 They aim to be the omakase of kalguksu — the most special way to enjoy it, apparently. This technique was even selected in 2025 through Korea's Startup Promotion Agency and Hanbat National University national support program, beating out a 20-to-1 competition rate, so I found myself paying extra attention to how I ate it 🙊

Every course at Jangwongap Kalguksu exists for one lead actor — the noodles!! It's their own special noodle, so keep that in mind 🙏🏿

Three people at Jangwongap: what we ordered and what it cost

On the recommendation of a super!! friendly staff member, we ordered the chadol minari-ssam shabu kalguksu for ₩15,500 and the whole shrimp seafood pancake for ₩13,500! There were three of us, and they suggested two servings of the shabu kalguksu plus one pancake!!

The meal had a sequence too, just like a course haha. First up: premium wagyu chadol (brisket) minari wraps!! Lightly blanched brisket piled high with minari (water dropwort), dipped in sesame oil sauce pressed right at the mill — the nutty flavor was on another level. Maybe that's why my expectations shot up 📈 I'd never seen a kalguksu place start with a meat course like this, so it felt fresh, and the brisket itself was tender with zero gamey smell, just slid right down!!

Uiseong garlic kimchi at Jangwongap

The Uiseong garlic kimchi served alongside the noodles impressed me too. Apparently it's made fresh three times a day with a secret broth, and once I put it on top of the noodles, the savory balance really came through. The garlic scent wasn't overpowering, just lingered gently — I kept reaching for more 🧄

How to eat the house-made noodles they call cheese noodles

They told us to try the well-cooked noodles plain first, with no dip, so I did — and I could really feel the texture changing through five stages. Next I dipped them lightly in freshly pressed sesame oil, and the nuttiness spread instantly, completely different from any kalguksu I'd had before.

In the end... we ordered more noodles haha. Usually kalguksu is all about the broth, but at Jangwongap Kalguksu the noodle itself is the star. It's house-made using a 60-year-old noodle-making method, kneaded a thousand times — which is why it's nicknamed "cheese noodles." You can see in the video how it stretches like cheese?? Even raw, it stretches without snapping, just like mozzarella — genuinely surprising to watch 👀

From 6 to 10 minutes: how the noodle texture changes

Noodle. O.ma.ka.se!! At 6 minutes it's chewy on first bite, at 7 minutes there's a stickier chewiness the more you chew, at 8 minutes a pleasant springiness, at 9 minutes a fluffiness from soaking up broth, and at 10 minutes it goes smooth going down — and eating through it, watching the texture change minute by minute really did feel uniquely special among kalguksu restaurants in Giheung-gu, Yongin!! I personally loved the springy texture around 8 minutes best, but the friend I went with said the softer 10-minute version was tastier. I think everyone has their own favorite timing 😚

The whole shrimp seafood pancake was crispy outside, soft inside, and packed edge to edge with whole shrimp and squid — perfect to pair between bites of noodles 🦑 It was hearty enough that you could order just the pancake alone 🍤

Finishing with perilla oil kkakdugi fried rice

Fried rice scraped clean to the bottom of the pot

We wrapped up with 100% perilla oil kkakdugi (radish kimchi) fried rice — top-grade rice fried with real perilla oil, well-ripened kkakdugi, and gim (seaweed) flakes, so nutty I ended up scraping the bottom of the pot 🥹 From noodles to meat to sides to fried rice, the flow of the course really convinced me this is a genuine kalguksu spot in Giheung-gu, Yongin 🫶🏿

Verdict on Jangwongap Kalguksu, and what fell short

Jangwongap Kalguksu made me wonder how a place can be this devoted to a single noodle — every course felt full of care. If you're looking for a kalguksu restaurant in Giheung-gu, Yongin, I really recommend trying this once 🥹 If I had to name a downside, it's that between taking photos of every course and stretching the noodles for fun, watching ends up taking longer than actually eating haha.

5 out of 5 stars, and I'd 100% go back. If you're after a special kalguksu experience, I recommend Jangwongap Kalguksu Yongin Giheung Branch 👍🏿
