I ordered the gogi-guksu (pork noodle soup), the signature menu item at Handam Guksu Gwakji Aewol Branch, located near Handam Coastal Trail in Aewol. Handam Guksu's gogi-guksu had a clean, mild broth with real depth of flavor. If you find overly greasy or heavy-handed gogi-guksu a bit much, this is probably the broth style you'd prefer. Eating the pale bone broth with the noodles, I noticed the savory richness of the broth first, and the more I chewed, the more the noodle texture and the meat flavor came through.

The savory flavor from the pork, the umami of the broth, and the starchiness of the noodles combined for that distinctive gogi-guksu taste. Jeju pork was used as the topping, and there was a generous amount of meat piled on the noodles.
