Prime Angus chuck flat in clear mushroom broth, 22,000 won

I ordered prime Angus chuck flat with clear mushroom broth. The broth was clear and light, letting the natural flavors of the meat and vegetables shine.

Prime Angus chuck flat (mushroom broth). I chose the clear mushroom broth, and the broth was clear and light, letting the natural flavor of the meat and vegetables shine. You could call it the most basic option 🍄

Thinly sliced prime Angus chuck flat with assorted vegetables
From the sheen of the meat to the freshness of the vegetables — details of a Hapjeong favorite

The meat was thinly sliced with its grain intact. A soft reddish hue spread through it, and the marbling was evenly distributed — a visual that promised juiciness. The way the meat lay layered like waves had a really nice sheen to it.

🥬 The vegetables came out generously — 11 kinds in total. Napa cabbage and bok choy gave a crisp green touch, sweet pumpkin added a yellow accent, and enoki and shiitake mushrooms sat abundantly, boosting the broth's flavor. There were also glass noodles and rice paper, making it a spread you could enjoy in many ways.

Adding the panda-shaped glass noodles

🐼 The panda glass noodles are a genuinely adorable touch. The glass noodles are shaped like pandas, and just seeing them floating in the clear broth makes you smile. The chewy texture was distinctive, and my chopsticks kept going back for more.

The thinly sliced meat, with its reddish grain intact, changes color quickly as soon as you dip it in the broth with your chopsticks. In that moment, the juices spread and blend with the light mushroom aroma, filling your mouth with a clean flavor.

There were personal tongs, so you could eat hygienically, and dip into the sauces however you felt like~

Porridge finish and omija tea at Shabu in Seoul Hapjeong Branch

The finale of Hapjeong shabu-shabu is, of course, the porridge 🍚 Made after the clear mushroom broth had been fully infused with the flavors of meat and vegetables, the porridge has a subtle aroma and deep flavor that goes down smoothly. Topped with seaweed flakes that add an ocean scent and fragrant sesame oil, one spoonful made me think, oh, this is actually really good.

And for dessert, omija (five-flavor berry) tea 🍷 The reddish omija in a clear glass has a gentle sweet-and-sour taste that cleanses your palate.

Shabu in Seoul Hapjeong Branch has a clean interior, a variety of broths, and even adorable panda glass noodles… If you want to spend a special day in Hapjeong, I recommend it.
