The weather's been so nice lately that we went on a date to Seoul Forest. After all that walking we wanted something sweet, so we looked up cafés nearby and ended up at 5to7 Seongsu Main Branch, known around Seongsu for its soufflé.

What caught my eye was a soufflé topped with mangosteen, one of my favorite fruits. I'd had mangosteen bingsu before but never soufflé, so I was curious how the combo would work. If you're looking for soufflé at a Seoul Forest café, here's the vibe, the menu, and how it actually tasted.

5to7 Seongsu Main Branch sits inside an alley off the Seoul Forest 2-gil café street, so if it's your first visit, I'd recommend following a map closely. Just make sure you turn into the right alley.

We visited around 2pm on a weekday. The building looks like a converted house, and the warm-toned brick exterior suited it well — you climb a set of stairs to reach the entrance.

Inside, soft lighting and deep wood tones gave the space a calm feel. The 1st floor has the order counter and a few seats, with a coziness that felt different from the outside.

You can also reach the 2nd floor via stairs near the outdoor terrace. The 2nd floor has more seats and feels a bit brighter than the 1st. That said, the stairs are fairly narrow and steep for carrying food, so take care going up and down.

Maybe because it was prime dessert time, almost every seat was taken even on a weekday. The outdoor terrace, great for enjoying the cool weather, was already full. We checked out both floors and settled at a window seat on the 1st floor.

You grab a seat first, then order, so make sure to secure a spot when you arrive. It was also convenient that both the 1st and 2nd floors each have their own indoor restroom.

A Seongsu café that makes every soufflé to order

5to7 Seongsu Main Branch makes the soufflé pancakes fresh once you order. Unlike pre-made desserts, there's a wait until it's ready, but the payoff is eating it warm and fluffy.

According to the café's own intro, they've run invited pop-ups in Tokyo and Hong Kong, and have been featured on Korean TV shows including 'Saturday Is Good for Rice,' 'Today Live,' and 'Today Live Tonight.'

It's an open kitchen, so you can watch the soufflé being made. Between the cream and fruit toppings and the soufflé's jiggly wobble, it's the kind of dessert that's fun to film.

The pancakes are big and stacked two layers high, so it has real visual presence.

The fruit soufflé changes with the season — at the time of our visit, they were serving fig and mangosteen soufflé.

Beyond coffee, there were cream drinks, milk tea, teas, and ades to choose from.

After some deliberation we picked the mangosteen soufflé (₩28,000), a moka pot americano (₩6,000), and milk tea (₩7,500). The total came to ₩41,500.

We were told the soufflé takes about 20 minutes to come out after ordering. It's not an instant dessert, so if you have plans afterward, build in some buffer time.

Mangosteen soufflé: the pancake itself was the best part

The soufflé grabbed my attention the moment it arrived. The mangosteen was more generously piled on than I expected, and the cream on top looked plump and jiggly just from looking at it.

I love mangosteen and eat it fairly often, but I'd never seen it on top of a soufflé before, so I was eager to dig in.

I tried the pancake by itself first. Soufflé can sometimes have an eggy smell that's a letdown, but to my taste, this pancake had none of that — it was just good on its own.

It was very fluffy and soft with no undercooked feel at all. It was good enough to eat plain, without cream or fruit, which told me this is a place where the base soufflé itself is well made.

The cream was as plump and sweet as it looked. It didn't feel heavy or cloying alongside the pancake, and paired well. The mangosteen was well-ripened and nicely sweet, too.

That said, if you ask whether mangosteen and soufflé are a perfect match, in my opinion, not quite. It didn't blend as naturally as strawberry or fig might — it felt more like enjoying a good soufflé and good mangosteen side by side rather than as one unified flavor.

That doesn't mean they clashed, though. Each element tasted good, and there was fun in eating them together, so if you like mangosteen the way I do, it's worth choosing.

Clean milk tea and a rich moka pot americano

What I liked just as much as the soufflé was the milk tea (₩7,500) at 5to7 Seongsu Main Branch. I love milk tea and have had it at plenty of places, and it's disappointing when it's chalky or has an overly artificial syrup taste.

This milk tea was clean with no chalkiness, and the sweetness was just right. There was a subtle black tea aroma without tasting artificially sweet, so I enjoyed it a lot. It also paired well alongside the sweet soufflé.

The moka pot americano had a strong, rich coffee flavor. Taking a sip between bites of the sweet cream and pancake worked really well. It would suit anyone who likes pairing their dessert with strong coffee.

Is 5to7 a good dessert stop after a Seoul Forest walk?

5to7 Seongsu Main Branch was a great Seongsu café for enjoying the atmosphere, the view from the window seats, and the dessert together. Even on a weekday afternoon it was busy, and after trying it myself I understood why it's known for its soufflé.

The mangosteen soufflé I had wasn't the ultimate fruit-and-pancake pairing, but there was real satisfaction in a well-made, fluffy soufflé paired with a fruit I love. The milk tea was memorable for being so clean.

If you're looking for soufflé at a Seongsu café, it's worth comparing the seasonal fruit option against the base menu. It was also a nice place to sit and rest after a walk through Seoul Forest — next time, I'd like to come back for the strawberry soufflé once winter strawberry season hits.
