What I ordered at Chung-sil Hoegwan in Hansol-dong, Sejong

I wanted a hearty meal in Sejong, so I stopped by Chung-sil Hoegwan. That day I was craving warm broth with a proper bowl of rice, so I ordered the galbi kimchi jjigae (rib kimchi stew). Since it comes with sotbap (pot rice) as well, I knew as soon as I saw the menu that I'd polish off a full bowl of rice.

How is the galbi kimchi stew broth at Chung-sil Hoegwan?

After a short wait, the galbi kimchi jjigae arrived at my table. It's the kind of kimchi jjigae that bubbles away while you eat, so it stayed warm the whole time, and having ribs in it gave it a different kind of heartiness than a regular kimchi jjigae.

The well-fermented kimchi had really infused its flavor into the broth, and eating it together with the ribs made the broth taste even richer and deeper. The tangy, slightly spicy kick of the kimchi went really well with rice, and I kept reaching for my spoon. With hot broth and ribs together, this would make a satisfying lunch or dinner.

One thing I really liked about Chung-sil Hoegwan was the sotbap. The meal felt much more substantial with freshly cooked warm rice served alongside, rather than just eating the stew on its own.

Spooning the galbi kimchi jjigae broth over the rice was delicious, and piling the kimchi and ribs on top of the rice worked well too. As the broth thickened a bit, the seasoning balanced perfectly with the rice. Kimchi jjigae really is best eaten with rice :) The side dishes rounded things out nicely, and before I knew it, I'd finished a very filling meal.

Is the stew okay if you can't eat spicy food?

Overall, the galbi kimchi jjigae at Chung-sil Hoegwan wasn't overwhelmingly spicy — it was a flavor that's easy to enjoy with rice. Because it's a kimchi jjigae with ribs in it, eating the ribs and kimchi together was much tastier than just sipping the broth alone.

The kimchi was softly cooked, which made it easy to eat with the ribs, and it paired really well with the warm sotbap. I thought this would be a good spot to visit in Sejong whenever you're craving a hearty Korean dish like kimchi jjigae. It's good for a solid solo meal, and the atmosphere is relaxed enough to bring family or friends without any pressure.
