A hearty tonic meal found in Seomyeon Visiting Gang Galbitang

After work in Seomyeon I was starving but didn't want to just grab anything random — I really needed a proper, filling meal — so I went looking for a solo-dining spot in Busan's Seomyeon and found Gang Galbitang.

I happened to arrive right at lunchtime, and every table in the spacious restaurant was already full — it's a well-known Seomyeon spot not just among nearby office workers but among foreign visitors too, so it was buzzing with all kinds of customers.

Gang Galbitang's dedicated parking is the Blue Parking Lot, at 399-8 Bujeon-dong, Jin-gu, Busan. If you park there and then eat at the restaurant, they'll give you cash parking support — worth knowing.

Even during the busy peak hours, one side of the restaurant had a neat row of tables set up for solo diners, which looked really convenient for anyone nearby who wants a no-pressure solo meal or a quick drink while on a busy workday.

Spicy galbitang vs. regular galbitang: what's the difference?

Once we sat down, I ordered the spicy galbitang while my friend went with the classic regular galbitang. We compared the regular version and the hangover-curing spicy version side by side at the same table.

A little later, the galbitang arrived bubbling away in stone pots, looking incredibly generous!

My friend's regular galbitang was clean and refreshing with no gamey smell at all, but had a deep, rich meaty aroma that made every sip of broth impressive.

The long-simmered short ribs were so tender that the meat fell right off the bone with just a touch of the chopsticks.

The spicy galbitang I tried had this fantastic balance of heat and a heavy meat broth — every spoonful felt like it was clearing me right out, in the best way, haha.

It wasn't an artificial, seasoning-heavy kind of spicy — the deep, sharp seasoning soaked into the meat perfectly, more than enough to mix with a bowl of rice. There were glass noodles at the very bottom of the soup, and finishing off with those at the end was pure bliss.

They also had noodles available to add, so I did — and even though I'm usually not a noodle person, these chewy noodles were amazing. Turns out they're the same noodles used by a famous Jeju pork noodle soup restaurant, sourced directly from Jeju.

Most galbitang restaurants usually just give you kkakdugi (radish kimchi) and kimchi and call it a day, but Gang Galbitang's self-bar was so stocked with neat little side dishes that I found myself thinking, 'Could there possibly be more side dishes than this?' Being able to freely take as much as you want of dishes that pair well with galbitang was genuinely satisfying.

I was impressed to see an ice maker cleverly placed right next to the coffee machine on the self-bar. You could fill a cup with ice and get a nice cold iced americano, even to take out — a perfect finishing touch to the whole meal, haha.

Even walking out after finishing off a whole stone pot, the deep broth and tender short rib meat lingered in my memory.
