Seomyeon galbitang restaurant with big, tender ribs: Gang Galbitang
In short
Gang Galbitang Seomyeon is a galbitang (beef short rib soup) restaurant in Seomyeon, Busanjin, Busan, known for bowls packed with large, tender short ribs. The writer ordered both the basic galbitang (14,000 won) and the spicy galbitang (15,000 won) with jungmyeon noodles added, and found the solo seats comfortable and the portions generous. The clean, gently sweet basic broth was the bowl at Gang Galbitang Seomyeon worth coming back for.

Another hangover-soup diary entry haha. I was craving galbitang (short rib soup) again in Seomyeon, so I went back to Gang Galbitang Seomyeon. I'd eaten here once before and remembered the rib portion being seriously generous, so I had to come back 𖥧𖤣𖡼

Right on the storefront, the Chinese characters for "broth pride" are written out boldly. That's a lot of confidence in the broth haha

They also sell an easy-cook galbitang mealkit for ₩13,500 and a special version for ₩16,500. It says it can be frozen for up to 3 months.
Is Gang Galbitang Seomyeon good for eating alone?
This place seems really good for solo dining?? There were actually quite a few people eating alone, and like a Japanese restaurant there were more single seats lined up than I expected, so it didn't feel awkward to sit by myself. If you're looking for a solo dining spot in Seomyeon, Busan, this is a great place to come alone, eat a bowl of galbitang, and leave full ᨒ ོ ☼
The galbitang-making process looked surprisingly complicated. So that's why it's pricier than I expected...
The self-serve refill bar had kkakdugi (diced radish kimchi), doenjang (soybean paste), peppers, garlic, dried radish strips, chosukjam (Chinese artichoke), and soy sauce.

I was curious about the chosukjam that looked like some kind of grub I'd never seen before haha

And this place gives out hand cream if you leave a review event!

You order at the kiosk. There's one out front and one at the register.
Ordering the basic galbitang and the spicy galbitang

We ordered one basic galbitang and one spicy galbitang that day.
- Galbitang ₩14,000
- Spicy galbitang ₩15,000

I couldn't resist trying the chosukjam first.

It looks pretty rough honestly, but it tastes kind of like a fancier version of rakkyo (pickled scallion).

After ordering and waiting a bit, the galbitang arrived with big chunky ribs. The rib size alone already wins you over, right?

Spicy galbitang with jungmyeon noodles added
They added jungmyeon (medium-thick wheat noodles) to the spicy galbitang haha. I picked spice level 1: spicy. Mouth-watering already...
With bean sprouts and radish in it, it feels like eating a spicy beef rice soup.

The spicy galbitang is definitely spicier than the basic one. Coarse red pepper flakes give the broth a real kick. Some people might actually find it too much!

Definitely add the jungmyeon noodles. It already comes loaded with glass noodles, but adding jungmyeon on top is basically a blessing.

Short ribs so tender you barely have to chew
The ribs are seriously soft...❤️

With badly made galbitang you end up doing crazy amounts of jaw work

But this one, even a grandma without her dentures in could eat
The basic galbitang broth is subtly sweet and savory-mild. Personally, I preferred the basic version over the spicy one.
It's not strongly seasoned, so the broth paired really well when eaten with the ribs. There's also jujube and ginseng inside! With such generous ribs plus jujube and ginseng, it naturally feels like a tonic meal haha
Dipping it lightly in lemon soy sauce is the best way to eat it... ah, I want more already
Last time I came, there was so much meat I had to leave some behind and it was such a waste

This time, either my stomach has grown or something, but I finished everything from the ribs to the rice lol. Scraped the bowl clean. 😋
Final verdict on Gang Galbitang Seomyeon
My boyfriend, who came with me, said this was the best galbitang he's had recently! I'd recommend it as a lunch spot in Seomyeon.
- Anyone looking for a solo dining spot in Seomyeon
- Anyone wanting hot, warming broth
- Anyone looking for a generous bowl of galbitang
- Anyone who wants a hearty meal while drinking alone
Next time I'd probably go with the basic galbitang again! The meat was generous and the broth suited my taste, and once again I left completely full.
