Late-night Vietnamese restaurant near Ajou University, Suwon: Madam Hao

I visited Madam Hao, a newly opened Vietnamese restaurant near Ajou University. I found it while looking for somewhere to eat around Ajou University, and it was a new spot serving pho and bun cha (Vietnamese grilled pork with rice noodles). What stood out most was that it stays open until 3 AM! It seemed like a great place to keep in mind for a late dinner near Ajou University, or when you suddenly crave pho or bun cha late at night.

That day, we ordered beef brisket pho and charcoal-grilled bun cha, and I was quite happy with the combination.

A wood-toned exterior and spacious interior

The clean exterior of the newly opened Madam Hao has large lettering that reads “Madam HAO, HANOI STREET FOOD.”

Its wood-toned exterior gave it a slightly different feel from a typical pho chain.

Once inside, the restaurant was much larger than I expected. There were plenty of tables, including large ones for groups, so it looked good both for a meal for two and for a visit with friends.

Overall, the wood-toned interior and warm lighting made for a comfortable atmosphere to eat in.

Ordering beef brisket pho and charcoal-grilled bun cha

The beef brisket pho is ₩11,000, and the charcoal-grilled bun cha is ₩13,000. We ordered the two dishes that come to mind first when going out for Vietnamese food.

Rather than ordering just one pho, we also got bun cha to share, and I personally liked this pairing. The warm-broth pho and sweet-tangy bun cha have such different flavors that they were nice to alternate between.

Beef brisket pho with plenty of meat

First up was the beef brisket pho. You could tell even from the photo that it came with a generous amount of brisket. It was also topped with lots of finely chopped scallions, making it look appetizing from the moment it arrived. Rather than being overly intense or heavy, the broth was warm and clean-tasting.

The soft rice noodles with brisket made for a satisfying bowl, and I liked that there was more meat than I expected.

On slightly cool nights like these, it seemed like just the thing when you are craving a warm bowl of broth late at night.

Bun cha with a real charcoal aroma

Then there was the charcoal-grilled bun cha, which personally stayed with me more. The bun cha comes with rice noodles, charcoal-grilled meat, vegetables, and sauce, all served separately.

Take a suitable portion of noodles and vegetables, add the charcoal-grilled meat, then dip it into the sauce. The meat was nicely browned, with a subtle charcoal aroma.

It was especially much better when I ate the meat and vegetables together with the noodles rather than eating the noodles alone. The sauce also had chili and garlic in it, adding a slight spiciness to its sweet-tangy flavor.

The savory meat went so well with the refreshing sauce that I kept reaching for it! If you are looking for bun cha near Ajou University, this is worth trying.

For two people, order both pho and bun cha

Rather than choosing one or the other, I would recommend ordering one pho and one bun cha to share if two people are visiting. The pho is warm and mild, while the bun cha is sweet-tangy with a charcoal aroma, so the two dishes have completely different charms. A sip of pho broth after bun cha was a great match, too.

When you need a late meal and parking near Ajou University

Whether parking is available matters when visiting by car, too. Madam Hao has parking space, so it was convenient to visit by car. Around Ajou University, parking can make choosing a restaurant difficult, so having a place to park was definitely a plus. The dining room is spacious as well, making it easy to eat at a relaxed pace.

One of Madam Hao’s biggest advantages is definitely its late hours. Many restaurants near Ajou University close later in the evening, but Madam Hao is open until 3 AM on most days. It looked like a good place to visit when dinner has to be late, when you want a warm meal or broth rather than drinks, or when you crave pho at night.
