Today I want to introduce a place that gopchang (beef intestine) lovers will be glad to hear about. This time I visited Jinseong Hanwoo Gopchang Garak Flagship. I had gopchang, plenty of vegetables on the side, and finished off with kkakdugi (radish kimchi) fried rice. The photos alone make me want to go back, so let me show you around 🤎

Walking in, the tables were all set and the overall mood was comfortable. Other diners were already eating when we arrived, which gave the sense that this is a well-loved spot in Garak-dong. Gopchang is great for eating in a group, so this could work well for a dinner with friends or a group gathering.

Looking at the menu, they serve hanwoo (Korean beef) gopchang, hanwoo daechang, and hanwoo makchang. We ordered gopchang as our main dish that day, and finished off with kkakdugi fried rice as a closing dish 😋

Check the meat origin labeling too

The restaurant also displayed origin information for the ingredients used. You could check the origin of the gopchang, kimchi, rice and other key ingredients, which made it easier to eat with peace of mind.

A generous table that starts with the included sides

Garlic sauce served alongside the gopchang

Once we sat down, the basic side dishes that pair well with gopchang were set out. Three types of kimchi came out along with a minari (water celery) pickle and garlic sauce that go well with gopchang. Since gopchang is a fairly fatty dish, I loved having so many side dishes to balance it out.

Hot, soft steamed egg in a stone bowl

Before the gopchang, the egg stew arrived too. It came bubbling in a stone bowl, so it was nice to eat warm. The texture was soft and fluffy, which made it a good thing to pair with between bites of gopchang. The combination of a rich dish like gopchang with egg stew never fails 😊

What comes on one gopchang platter?

The gopchang at Jinseong Hanwoo Gopchang Garak Flagship is arranged neatly on a large grill pan, with chives, mung bean sprouts, kimchi and rice cake piled in the center. It's not just gopchang alone — several ingredients come together so you can mix and match as you eat.

Finally, the main dish arrived. It looked seriously generous from the moment it came out. Watching it sizzle away on the grill pan looked incredibly appetizing 🤎

Gopchang grilling to a golden brown

The staff cut the gopchang into easy-to-eat pieces, and then it's up to you to grill it yourself. At first, I tasted the gopchang plain to enjoy its clean flavor, then had it together with chives, mung bean sprouts and kimchi. The golden-brown gopchang had a nutty, savory flavor, and the vegetables on top added crunch, which made for a great combination. For gopchang lovers, this moment of watching it cook on the grill might be the best part 😆

Gopchang tastes best wrapped with chives

You can't skip the chives when eating gopchang. Piling chives and mung bean sprouts on top of well-cooked gopchang gave it a richer texture, and the side vegetables kept me reaching for more. Eating it with kimchi also worked really well. Rather than eating gopchang on its own the whole time, alternating with chives, sprouts and kimchi meant I could keep eating right to the end without feeling too heavy.

How was the kkakdugi fried rice finish?

The kkakdugi fried rice at Jinseong Hanwoo Gopchang Garak Flagship is fried rice made with kkakdugi (diced radish kimchi), topped with a fried egg, seaweed flakes, green onion and minced garlic. It was the perfect way to finish off after eating gopchang.

After eating gopchang, fried rice is a must. It looked as delicious as its name suggested. The savory rice combined with kkakdugi gave it a crunchy texture and deep flavor. Breaking the egg yolk and mixing it into the rice made it even more delicious 🥚
