Daegu Korean restaurant for bossam and doenjang stew: Uldong Bossam

In short

Uldong Bossam is a Korean restaurant in Jung-gu, Daegu, serving bossam set meals and pancakes. I added a minari pancake to the bossam set and loved the grind-your-own sesame sauce, chewy pork jowl, and beef brisket doenjang jjigae. A clean, filling meal worth a visit.

I've been having so much fun seeking out newly opened restaurants in Daegu 😋 This time, I visited the newly opened Uldong Bossam in Dongin-dong. True to its status as a new spot, Uldong Bossam felt clean and polished, with some fun touches in the food.

I love bossam (boiled pork wraps), so I was curious as soon as I heard a new bossam restaurant had opened.

After visiting and trying it myself, I was quite pleased: the spread was more substantial than expected, and there were plenty of ways to enjoy the bossam.

Traditional atmosphere and a variety of seating

As you enter, the Korean-inspired interior immediately catches your eye.

Traditional-style decorative pieces are placed throughout, creating a space that feels both neat and welcoming.

Uldong Bossam doesn't only serve meals; it also has a range of drinks, from makgeolli (Korean rice wine) to whisky, so it would be a nice place for a casual drink alongside your meal 🍶🥃

There were a variety of seating options, from bar seats ideal for dining alone to group tables for several people.

Drinking spread with bossam and jeon

With bossam, a type of jeon (savory pancake), and a glass of makgeolli, it would make a great full-on drinking spread too.

Bossam Set and Minari Jeon

I ordered the bossam set and minari jeon (Korean water celery pancake) 🥬 From the moment it arrived, the table was completely filled, making it look satisfying before I had even taken a bite. Rice, doenjang jjigae (soybean paste stew), assorted side dishes, bossam, and minari all came together, making it a thoroughly complete meal.

Grind-your-own sesame sauce

Another fun point at Uldong Bossam was the sauce where you grind the sesame seeds yourself. It added a nutty flavor and paired especially well with the pork jowl.

The side dishes were neatly served, and minari and accompaniments came alongside the bossam, so I could mix and match them in different ways depending on my taste.

The pork jowl I enjoyed most

More than anything, the pork jowl was what I enjoyed most that day 🤍

Its texture was different from typical bossam meat, and I really loved pork jowl's signature chewy yet tender bite.

Chewy and tender pork jowl

It was nicely rich without being too dry, so it was delicious on its own and paired well with the accompaniments too.

Doenjang jjigae with beef brisket

Since the doenjang jjigae came with the bossam set, I initially thought it would just be a light side, but it even had beef brisket in it 👀

It also contained tofu and vegetables, and a spoonful of warm doenjang jjigae with rice between bites of bossam was really filling 🍚 A meal with meat feels a little lacking without stew, but having doenjang jjigae with beef brisket made it perfect for properly finishing a whole bowl of rice.

Bossam set alone didn't feel quite enough, so I ordered the minari jeon too. Since minari already comes with the bossam, I hesitated briefly over adding the pancake, but in the end I was glad I ordered them together 😊

Minari pancake ordered with bossam

Its distinctive fragrant minari aroma refreshed my palate when I had it between bites of meat. The potato pancake also caught my eye 🥔 After bossam and minari jeon, potato pancake would have been a little too much, but I definitely want to order it on my next visit.
